These chocolate chip cookies are everything I need right now!
I have been making these cookies the same way since I was 11 years old. And when you have something that’s great why change it, right? These cookies don’t need changed. They are the perfect pick-me-up when you are in the middle of a quarantine day and you open the fridge for the 15th time just to close it back up. Stop the hunt and make these cookies! Not too big, not too small but just right.
These cookies are the ones my parents request whenever we are going to get together for a holiday and I ask if there is anything else I could bring. “Why don’t you make some of your chocolate chip cookies if you have time? We would love those!”
These chocolate chip cookies aren’t too fancy, but definitely aren’t boring either. They are the perfect dessert in that they won’t put you over that fullness threshold where you feel like you can’t move for days. They’re just simple, delicious chocolate chip cookies.
Exhibit A ↓: The reason I never end up with as many cookies as the recipe calls for. It’s what all kids beg for and all husbands sneak around and steal from your bowl or maybe that’s just my husband.
There has been a lot of change going on lately. Most of what has come out of the changes related to Covid-19 have been positive, however. Communities are working together, families are growing closer, and people are doing what they can to help those in need.
I have personally taken this time to ensure my kids are receiving the attention and care that they deserve. We are continually seeking out new resources to interact with while they are at home. This post lists our favorite free resources for kids. It has been going considerably well. Some days we can go all day and others we barely get to lunch and then agree it is time for a cookie break.
These are the kind of cookies you have to hide so they aren’t all gone by 3pm. These also freeze really well. Who else loves a good frozen chocolate chip cookie?!!
This cookie recipe is the tried and true Nestle Toll House® one. There are a couple things I do to ensure they come out just like I want them to every single time however.
My Cookie Tips
- Use semi-sweet chocolate chips or chocolate chunks. It’s my chocolate of choice for these cookies.
- Use unsalted butter that is just starting to melt. I microwave 2 sticks of butter together in a microwave-safe bowl for 15-30 seconds. Touching the butter should leave an indention of your finger and that is how you know it’s good to use. Very scientific, I know.
- Err on the side of under-baked cookies. I cook them for 8 – 9 minutes tops. The edges should just be starting to turn a golden brown. Leave them to cool on the pan for 2-3 minutes and then transfer to cooling racks.
- Use SHINY cookie sheets. No dark pans for these cookies. Also I don’t use any parchment paper or baking mats.

Ingredients
- 1 cup unsalted butter (2 sticks)
- 3/4 cup granulated sugar
- 3/4 cup packed light brown sugar
- 1 tsp vanilla extract
- 2 eggs
- 2 1/4 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp kosher salt
- 2 cups semi-sweet chocolate chunks or chips or combination
Instructions
- Preheat oven to 375℉.
- Soften butter in microwave using microwave-safe bowl for 15-30 seconds so it is just starting to melt. Add butter, granulated and brown sugars, and vanilla extract to bowl of stand-up mixer. Beat on medium until creamy. Add eggs one at a time. Beat well after adding each egg so they are incorporated into batter. No need to use room temperature eggs.
- Add flour, baking soda and salt to a separate medium bowl and mix with a spoon to incorporate ingredients before adding to batter. This ensures you don't overmix your cookie dough. Gradually add flour mixture to batter on low speed. Once batter is mixed well add chocolate chips or chocolate chunks and mix on low for 30 seconds.
- Drop cookie dough using cookie scoop onto shiny metal cookie sheets at least 2 inches apart. Bake for 8-9 minutes in center of oven or until edges are just starting to turn golden brown. Let cool on pan 2-3 minutes and then transfer with metal spatula to cooling racks. Enjoy! YUM!
