Get ready to drool over these Chia Pudding Triple Berry Banana Splits with Homemade Whipped Cream. These banana splits are a great dessert idea that is healthy too! They are topped with granola and crushed pistachios.
Berries, Berries, Oh My!
Spring is in the air and that means I get to start stocking my fridge with fresh fruit! Love❤️! These banana splits are not your average banana splits. They are loaded with a mound of berries!! When I picture banana splits, my usual vision is lots of ice cream and chocolate syrup with a banana in there somewhere to trick you into thinking the dessert is healthy because there is fruit in it. However, this banana split is giving you a whole lot more than just refined sugar.
Just look at those berries!!🤓
And in case you didn’t get a good enough look how ’bout another?!
Don’t ya want to just grab one?
I love the idea of fruit in some shape or form for dessert because I always incorporate it into the kids’ meals but not always for my husband and me. The added benefits from all of these berries should not go unnoticed! Blackberries and raspberries are great sources of fiber having about 8 grams per cup while being low in calories. The berries are also a great source of Vitamin C. Few desserts have as many nutrients packed as this one! The berries, chia pudding, crushed pistachios, and granola…well that’s a lot of yumminess and nutrition. All three of my kiddos had a hay day with these banana splits so obviously they are incredibly delicious!
These healthy banana splits are a great dessert or afternoon snack idea. Especially as it starts to warm up and we begin seeing affordable fresh fruit at the store again!
Homemade Whipped Cream
And the most desserty part of this recipe would be the homemade whipped cream. Um, it’s like Whoa! And a good dollop will do because there is so many delicious flavors in these banana splits.
It’s just sinfully good. It’s dangerous to know how easy it is to make!! 😉
All Put Together
Speaking of things put together, I am feeling so excited about the new look of 3 Scoops of Sugar and hope you are enjoying it too. It’s much easier to navigate and I’m just loving the design Julie from Deluxe Designs created.
And back to these delicious and oh so colorful chia pudding banana splits! Man, were they fun to make and once put together I did not let the pretty colors stop me from eating it!!
To Sum it up…
It’s like Summer in a Bowl!!
Chia Pudding Triple Berry Banana Splits with Homemade Whipped Cream
Ingredients
- 2 5 oz containers yogurt- I used strawberry and toasted coconut vanilla
- 4 tablespoons chia seeds divided
- 1/2 cup milk of your choice divided
- 1/2 cup fresh raspberries
- 1/2 cup fresh blackberries
- 1/2 cup fresh strawberries sliced
- 1 banana sliced lengthwise then cut in half
- 1 cup heavy whipping cream
- 3 tablespoons powdered sugar
- 1/2 teaspoon pure vanilla extract
- 1 tablespoon granola + 1 teaspoon crushed pistachios for topping-optional
Instructions
Chia Seed Pudding
- Transfer each container of yogurt into separate small bowls.
- Add 2 tablespoons chia seeds and 1/4 cup milk to each bowl. Stir well until combined and refrigerate at least 2 hours.
Homemade Whipped Cream
- Place mixing bowl and beaters or if using stand mixer the bowl and attachment in the freezer for 10 minutes.
- Add heavy whipping cream, powdered sugar, and vanilla to bowl and beat on medium-high speed for 3-5 minutes or until mixture has thickened and soft peaks start to form. To easily judge this, lift the beaters out of the mixture and you should see some peaks on the end of beaters. Should be soft, not stiff.
- Refrigerate if not using immediately.
Banana Splits
- Place two good scoops of chia pudding in bottom of bowls to set bananas in.
- Arrange 2 banana halves in the chia pudding of each bowl.
- Add berries around/in between banana halves.
- Top with a few more scoops of chia pudding. Estimate about 1/2-3/4 cup chia pudding per banana split.
- Sprinkle granola and crushed pistachios on top of fruit if using.
- Top off banana splits with a dollop of whipped cream.
- Enjoy and if you make them tag 'em @3scoopsofsugar on Instagram. I would love to see!!
