If you are at all curious as to how life has been going around here…to sum it up in a few words it is most definitely absolutely unpredictable. My fam is living in a hotel for the month of November. We sold our house and will be leaving Nebraska to move to Kansas! I am excited for our new little adventure and all the craziness that will come along with it. Our kids are 2, 3, and 4! I am even forced to take a second glance at those numbers after I type them! I mean 2! 3! 4! Oh man, I guess you can tell who runs the house! One thing that is not crazy is this orecchiette pasta with sausage and tomatoes. This meal is AMAZINGLY DELISH!!
Orecchiette pasta with sausage is a fun twist on the whole pasta/meat combo. And the tomatoes add another burst of flavor. My favorite part of making this meal is cooking the tomatoes until you are able to press and burst them open! Soo fun! 😉
Pairing the sausage with this pasta is perfect because there is already so much flavor in the sausage.
This past weekend my daughter and I headed to my parent’s house for some mommy/daughter time away from the hotel. It was awesome! We headed to the park, watched the SWEET HUSKER GAME with my sister and brother-in-law and their two boys, and made this wonderful orecchiette pasta!! 🙂
If you are at all wondering, this meal was incredibly easy to make! BONUS! Oh YA!
And there is nothing like grabbing a yummy bowl of pasta and sausage on a cool Fall night. Especially when you have run around after a 2 year old all day long…

Saturday Night Orecchiette with Sausage and Tomatoes
Ingredients
- 1 pound orecchiette
- 1/4 cup extra virgin olive oil
- 3/4 pound ground sausage
- 1 pint cherry tomatoes
- 1/2 teaspoon crushed red pepper
- 2 ounces mozzarella or provolone cheese shredded
- salt to taste
Instructions
- Cook orecchiette according to manufacturer's directions in a pot of boiling, salted water.
- Drain pasta, reserving 3/4 cup of pasta water.
- Meanwhile, in large skillet, heat 1 tablespoon olive oil over medium-high heat.
- Add sausage and cook through for approximately 8-10 minutes.
- Transfer sausage to a bowl and set aside.
- Add 2 tablespoons of olive oil and tomatoes and crushed red pepper.
- Cook over medium-high heat for about 5 minutes until tomatoes are soft enough to easily burst. Burst all of the tomatoes with a wooden spoon.
- Add the reserved pasta water and cook for another 5 minutes until most of liquid is reduced.
- Add pasta and sausage to skillet and remaining tablespoon of olive oil. Stir for another couple minutes until pasta is evenly coated.
- Remove from heat and top with cheese.
