Nothing sounds sweeter right now than a nice calm Saturday morning that involves this delicious granola!
The past few Saturdays have been a bit more eventful! They have all involved Husker football games and every game I attended at Memorial Stadium we won! Coincidence…maybe but it sure makes for some very fun games.
Last year I watched the games from the pleasure of my own home and I thought that was definitely the way to go. While there’s something to be said for chillin on the couch watching the game, nothing beats watching the tunnel walk from the stadium. Oh and you just can’t beat the one-liners you hear from the witty, sarcastic guy from behind. Nebraska…it’s not for everyone but it sure fits me well! 😉
Fun fact: Saturday’s game kickoff temp was 23℉ making it the coldest football game since 1993. My dad and I were there. I made it through only with the help of four layers of clothing, a hot Runza®, and the hottest cup of hot chocolate I have ever had. It was amazing.
If I could give anyone a tip (my dad!) it would be to leave your seat once in awhile and move around or you might have trouble getting up when it’s time to go because your legs are half frozen!!
Say what you want but the Huskers are a fun team to watch right now and if I were Michigan State or Iowa I would be a bit/extremely nervous to play us in the upcoming weeks!!!

Cinnamon Pecan Granola, welcome to my world!!
Saturday Morning Cinnamon Pecan Granola
Ingredients
- 3 cups old fashioned oats
- 1 cup pecans coarsely chopped
- 1 cup coconut
- ¼ cup brown sugar packed
- 2 tablespoons flax seed
- 1 tablespoon chia seeds
- 1 teaspoon cinnamon
- ½ teaspoon salt
- ½ cup coconut oil melted
- ½ cup maple syrup
- 1 egg white lightly beaten
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 300℉.
- Line baking sheet with parchment paper and set aside.
- In a large mixing bowl, combine oats, pecans, coconut, brown sugar, flax seed, chia seeds, cinnamon, and salt. Stir and set aside.
- In medium bowl, combine melted coconut oil, maple syrup, egg white, and vanilla. Whisk ingredients until smooth.
- Pour wet ingredients over dry ingredients and mix with spatula until just moistened.
- Spread granola mixture onto baking sheet and even it out into a thin layer with rubber spatula.
- Bake at 300℉ for 45 minutes, making sure not to stir granola while it is baking. This would prevent large clusters from forming. Let granola cool completely and then break clusters apart.
- Store in airtight container up to 1 week.
