We don’t make big breakfasts or have fancy brunches too often, but when the time comes around this is that kinda brunch cake! I hope we all agree that the best part of any coffee cake or blueberry crumble cake is the crumbly topping! It’s the cherry on top.
There is so much crumbly goodness going on with this blueberry brunch cake that you will want to forget about all the eggs, sausage, bacon, and fruit this one time and go all in on this dreamy blueberry brunch cake!
If blueberries were as accessible to me as they were in Maine, then we would be tossing blueberries in nearly everything. Blueberry lattés, blueberry chicken, blueberry ice cream…blueberries are my absolute fav!

They have three general responses to the food I make: 1) they hold out their hands and point their thumbs toward each other = It’s okay, mommy, 2) they give me two thumbs up, and 3) they pump their arms up and down, meaning they love it! They both gave me the pumping their arms up and down motion.

So, let’s get this summer brunch event going shall we?! The 4th of July is over, how can that be? Time just flies. Whether it’s a quickly thrown together weekend family brunch or planned family event, this blueberry cake will win them all over.
A few of the reasons I love this blueberry crumble cake:
- The dense bottom part of the cake is just wonderful. It’s not light nor is it even close to dry. It’s simply dreamy.
- The blueberries fit with this type of cake just right. They are plump and juicy and help the cake maintain that soft texture.
- The icing on the cake is the crumble topping, if you haven’t heard that about 10 times already. I can’t get over it. I won’t. I don’t eat blueberry crumble cake every day and I’m not going to start because there is a little bit of butter, and sugar in it. Or a lot. But life is about balance and eating right isn’t about eating perfect because that doesn’t exist. So if I (or you) are going to go to the trouble to making a fancy blueberry crumble cake for friends and family, then I want it to be the best blueberry crumble cake ever.

Dreamy Blueberry Crumble Cake
Ingredients
- 4 cups all-purpose flour divided
- 1/2 cup granulated sugar
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon kosher salt
- 1/2 teaspoon ground cardamom
- 1 egg
- 1/2 cup milk
- 2 tablespoons vegetable oil
- 2 teaspoons vanilla
- 1/4 cup chopped pecans
- 1 cup light brown sugar packed
- 1 teaspoon ground cinnamon
- 1 1/2 cups fresh blueberries
- 1 cup unsalted butter melted
Instructions
- Preheat oven to 325℉. Grease a 13x9 inch baking dish with non-stick spray or olive oil spray and flour shaking out excess. Set aside.
- In a medium bowl combine 1 1/2 cups flour, 1/2 cup granulated sugar, baking powder, salt, and cardamom. Whisk together until blended well.
- In a large bowl, add egg, milk, oil, and vanilla. Whisk contents together until well blended.
- Add dry ingredients in to bowl of wet ingredients and fold in using a rubber spatula. Batter will get pretty sticky. Drop batter as dollops in to the prepared dish and spread/smooth out. Set aside.
- In a medium bowl, combine 2 1/2 cups flour, pecans, brown sugar, and cinnamon. Mix together with a rubber spatula. Fold in blueberries, being careful not to smash them. Pour melted butter over mixture and again fold in as to not break the blueberries open. Once mixture becomes crumbly, sprinkle crumb mixture over batter in pan.
- Bake 30-35 minutes or once toothpick inserted in center comes out clean.
- Let cool on a cooling rack for 20 minutes prior to serving.
