Tacos. What is it about tacos that makes me love them so much? There’s usually no more than a handful of main ingredients in a single taco but when wrapped in a warm tortilla they are simply satisfying. But street tacos take tacos to another level. Do not be fooled by the smaller tortilla shell however, because they often have double the flavor. And that is the case with these Tasty Chicken Street Tacos with roasted ranch chickpeas and a drizzle of homemade ranch dressing on top! Cuz why not?
Stay at Home Gig
Life has brought me an abundance of changes in the last several months. One of the biggest has been my decision to leave my job at the hospital and stay at home with the kids for the time being. We are talking early mornings full of inspirational coaching on potty training, Mickey Mouse Clubhouse, 10 o’clock story time, continuous prompting to finish breakfast in less than an hour (thank you Mickey Mouse Clubhouse 😉 ), and the ever-so-loud dumping of all the Legos right before we need to head off to afternoon preschool!
I run around during the day so much I absolutely make myself wake up early so I can make that first cup of coffee and actually enjoy it while it is still hot. Followed by the famous tip-toeing throughout the house to pick up last night’s mess of toys so they can repeat the same mess today. This is my life and I love it. It’s utterly exhausting some days but I love it because it’s those moments when your 3 year-old whispers in your ear “I really like you mommy, you’re the best mommy in the whole world” that you know you must be doing something right. ❤️
Street Taco Fillings
Now back to these tacos. What makes a good taco? A: The right fillings. Now, everyone has their own ideas about what the right fillings are but how about takin a peak at what I put together? 🙂
Why these chicken street tacos are so awesome:
1) Chicken breasts coated with a Mexican rub, baked, and shredded.
2) Chopped onion, jalapeño, and cilantro for an added kick.
3) Addition of my 30 Minute Roasted Ranch Chickpeas to add some crunch.
4) Topped off with homemade ranch dressing that I am seriously obsessed with lately because you can keep the seasoning mix in your fridge for 3 months and just add milk and mayo to it when you are ready for some easy homemade ranch dressing.
Tasty Chicken Street Tacos with Chickpeas
Ingredients
- 1 lb chicken breasts
- 1 tablespoon mexican rub
- 6-6 inch corn tortillas
- 1 cup roasted ranch chickpeas
- 1/4 cup cilantro chopped
- 1 cup yellow onion chopped about 1/2 large onion
- 1 jalapeño minced
- 1 tablespoon homemade ranch seasoning mix
- 1/3 cup milk
- 1/3 cup mayonnaise
Mexican rub
- 1 tablespoon ground cumin
- 1 tablespoon packed brown sugar
- 2 teaspoons kosher salt
- 1 teaspoon chile powder
- 1 teaspoon ground coriander
- 1 teaspoon dried oregano
Homemade Ranch Seasoning Mix
- ½ cup buttermilk powder
- 2 tablespoons dried parsley
- 1 tablespoon dried chives
- 2 teaspoons garlic powder
- 1½ teaspoons onion powder
- 1 teaspoon dried dill weed
- 1 teaspoon Kosher salt
- ½ teaspoon black pepper
Instructions
Chicken Breasts
- Preheat oven to 375℉. Coat chicken breasts with olive oil and mexican rub on both sides of chicken. Place in baking dish and bake for 18-22 minutes. Shred chicken and set aside.
- While chicken is baking, chop cilantro, jalapeño, and onion. Stir and place in small bowl and refrigerate until later.
Chickpeas
- Recommend making chickpeas ahead of time to save on time as they take about 25-30 minutes to roast. If using leftover chickpeas that have been in the fridge, I roast them for 10 minutes in the oven at 400℉ right after the chicken is done baking.
Homemade Ranch Dressing
- In medium bowl, add homemade ranch seasoning mix, milk, and mayonnaise. Blend with hand mixer.
Arranging Street Tacos
- Just prior to serving, heat tortillas in a stainless steel skillet without any oil and heat for 30 seconds to 1 minute on medium heat.
- Fill street tacos with shredded chicken followed by spoonful of onion, cilantro, jalapeño mix and sprinkle of roasted chickpeas. Drizzle ranch dressing over tacos or serve on the side.
