I love a good salad, that should be no surprise. Furthermore, I love a good salad that comes together in 30 minutes or less! Look no more and feast your eyes on this delicious and good for you berry spinach salad. It’s what awesome summer meals are made of.
Nothing is better than having fresh fruit around to toss on a salad to really up the flavor factor. I hate a blah salad. There is nothing blah about this one!
As you may have noticed, I am on a red cabbage kick lately. Sorry, not sorry. Shredded red cabbage adds sooo much to all kinds of dishes. I love it with sandwiches, taco salads, spinach salads, burrito bowls or any kind of bowl really.
Let’s look at the facts- real quick I promise! One cup of shredded red cabbage contains only 22 Calories, 1.5 grams of fiber and is loaded with nutrients! It is high in Vitamin C, an antioxidant, and contains many more including B vitamins, vitamins A and K, folate, potassium, calcium, and iron. So if you are looking for a good addition to your next salad, toss on some shredded red cabbage!
And when it comes to some fresh fruit, I don’t think I need to do any convincing to get you to toss them on!! What’s better than some fresh and juicy red raspberries and blueberries?!
Oh, and while we’re at it why not throw on some ripe avocado slices? Ya, that’s what I thought. It’s just the right thing to do.
The problem I hear about salads is that they sometimes are not filling. Well, if that is the case then the problem is strictly the salad you are eating. Where are the toppings at people?! Toss on that quinoa, sliced almonds, berries, avocado and then let’s talk about eating a not so filling salad. You agree?

Berry Delicious Spinach Salad
Ingredients
- 6 cups baby spinach stems removed
- 1 cup red cabbage shredded
- 1/2 cup quinoa any kind
- 1 1/2 cups fresh berries I used raspberries and blueberries
- 1 avocado peeled, pitted and sliced
- Topping: sliced almonds
Poppy Seed Dressing
- 1/4 cup olive oil
- 2 tablespoons cider vinegar
- 2 tablespoons honey
- 1 teaspoon poppy seeds
- 1/4 teaspoon salt
- 1/2 teaspoon dijon mustard
Instructions
Poppy Seed Dressing
- In a mason jar, combine all dressing ingredients. Replace lid and shake vigorously until ingredients are incorporated. Refrigerate until ready to use.
Quinoa
- Cook quinoa according to package instructions.
Salad
- In a large bowl, combine spinach and shredded cabbage. Toss in fresh berries and 1/2 cup cooked quinoa once cooled. Just prior to serving add the sliced avocado and dressing. Top with sliced almonds.
