School is back in action, guys!!
I have a first grader and two kiddos soon to start preschool!! Soccer mom is back in action again this year. Literally, all three of them start soccer in just a few days. And I have a minivan and I kinda love it although I wouldn’t admit that to you in person. I would tell you I miss my cool white Jeep.
As the new school year starts, it seems I just run around town dropping and picking up kids and fulfilling after school snack cravings.
I am counting on another great year!
These days that means lots of laughs, lots of fun family popcorn and movie nights, and the ability to wake up early enough so we’re not all scrambling out the door. Because the truth is sometimes I can not get myself to go to sleep early. I long for that 1-2 hours of quiet time at night and then pay for it in the morning. Why? Why do I do it to myself?? I know my kids take 30 minutes to eat breakfast and 10 minutes to get dressed and another 15 minutes to get into the car. So why do I still let them sleep until 7:00ish? I say 7:00 but by the time they actually walk themselves to the breakfast table it is 7:15!! They should probably be waking up at about 6am don’t ya think?
I think the main thing is that I totally need to start planning our mornings like I plan our weekly dinners. I (usually) have everything I need for supper each night of the week because I have to. It’s just not feasible to make multiple grocery store trips during the week with three kids. We would either have boxes full of candy or they would literally leave the store crying each time because I didn’t let them get any toys/treats again.
It’s a real life struggle.
What’s not a struggle are these amazing meatballs made with just 5 ingredients + the salt and pepper but we aren’t counting those. They are so yummy and even the kids love them! And what’s not to love about that?!
We are planning our fall game days already with a healthy dose of these to kick them off!
I probably say this about every season of the year, but I do love fall!! There’s not much I enjoy more than a nice, cool Saturday at the pumpkin patch with my husband and kids!!

Ingredients
Meatballs
- 1 lb ground beef
- 1 egg lightly beaten
- 2 cloves garlic minced
- 1/4 cup Parmesan cheese
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Marinara Sauce
- 1-2 tablespoons olive oil
- 1/2 cup yellow onion finely chopped
- 4 cloves garlic minced
- 28 oz crushed tomatoes
- 1/4 teaspoon salt
- 1/4 teaspoon dried basil
- 1/4 teaspoon dried thyme
- pinch ground sage
- pinch oregano
- 5-6 fresh basil leaves chopped or torn
- 1/4 cup Parmesan cheese
Instructions
Meatballs
- Preheat oven to 400℉. Spray a rimmed baking sheet with olive oil or non-stick cooking spray and set aside.
- In a large bowl, combine all of the meatball ingredients and mix together until well incorporated. Form into 1 1/2'' round balls and place on baking sheet at least an inch apart. Bake for 18-20 minutes or until thermometer reads 160℉.
Marinara Sauce
- In a large skillet, heat olive oil over medium heat.
- Add onion and cook until softened, about 5-7 minutes. Add garlic and stir in.
- Pour in crushed tomatoes, salt, dried basil, thyme, sage, and oregano. Bring to a boil and then reduce heat to a simmer. Let simmer for 15-20 minutes. Stir in Parmesan cheese and sprinkle torn fresh basil leaves on top.
- Serve with meatballs. Share the love!!
