Deliciously baked cod made simple by searing it and then baking. There is so much added flavor with the orange cucumber relish on top. It’s one of my favorite ways to eat cod!
Fish is one of my favorite things to eat at restaurants. That is until I figured out how to cook fish at home and make it taste just as good if not better. And believe me, I still order fish when we go out (which is extremely rare these days). For that reason, I had good motivation to figure this fish thing out at home!
And fish may seem expensive when you go to buy it at the grocery store but just compare it to what you would pay at a restaurant, and I’m not talking the fish sandwich from Long John Silver’s. Fish is expensive at restaurants. When we lived in Kansas City, one of my favorite spots was McCormick and Schmick’s. Actually, I had a lot of favorites. A lot of expensive fish was eaten during those couple years and I sure don’t regret it!! Mmmm, good stuff.
What I want to show you today is how easy fish is to prepare and cook at home. It’s so easy and so fast! I love serving fish like this over some couscous and maybe a salad or some veggies and our meal is ready to eat in 30 minutes or less. It’s awesome.
I totally love how fish is so not high maintenance. Really, all you need is to season it with a little salt and pepper and squeeze some lemon on it and you are probably going to eat some great fish if it’s cooked just right! However, to fancy things up just a bit I decided today we need a super delicious orange and cucumber relish to toss on top.
And let me tell you the relish is fantabulous!! Like you may just eat it with a spoon. I know this because I did it.
In the Relish:
Orange
Cucumber
Mint Leaves
Apple Cider Vinegar
Salt
Black Pepper
Sugar

Simple Baked Cod with Cucumber Orange Relish
Ingredients
Cucumber Orange Relish
- zest of 1 orange and then diced small, remove most of the white pith that you can
- 1 cucumber peeled and diced
- 5-6 mint leaves chopped
- 1 tablespoon apple cider vinegar
- 1/8 teaspoon kosher salt
- 1/2 teaspoon granulated sugar
- 1/8 teaspoon black pepper
Cod
- 1 lb cod fillets cut into about 8 oz portions
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Juice Sauce for Cooking Cod
- zest and juice from 1 orange
- zest and juice from 1 lemon
- 1 teaspoon olive oil
- 1/8 teaspoon kosher salt
Instructions
Cucumber Orange Relish
- In a medium bowl, combine all the ingredients for the relish and combine. Refrigerate until ready to serve.
Baked Cod
- Preheat oven to 400℉.
- In a small bowl, combine ingredients for juice sauce. Set aside.
- Season cod fillets with salt and pepper.
- Heat 1 tablespoon olive oil in a cast iron pan over medium heat.
- Sear cod for 1 minute SKIN SIDE UP.
- Flip fillets over, pour the juice sauce over fillets and bake for 8-10 minutes, checking fish after 8 minutes to prevent it from getting overdone. Fish that is done is opaque and flakes.
- Top with cucumber orange relish and serve immediately.
