This Balsamic Cherry Rhubarb Chicken is sooo amazing you guys! We are giving our grill a rest and going all in on this chicken right now! We are talking the right amount of sweet flavor and tartness from the balsamic vinegar, cherries, and rhubarb.
I am not even joking when I say I want to eat this over and over again.

If you are unable to find rhubarb don’t stress, it will be just fine without it. However, the rhubarb adds a subtle tartness to it that I absolutely love!
Reasons I love this Balsamic Cherry Rhubarb Chicken:
- It’s easy to prep. The most time consuming part is pitting the cherries. Otherwise, you just mix the cherries, rhubarb, garlic, and the balsamic vinegar together and pour over the chicken and it’s ready to go in the oven.
- Kids love it too! If they are not fans of rhubarb it’s easy to shove aside the rhubarb and top their chicken only with the cherries.
- The flavor is incredible. It has just the right amount of sweetness + tartness to make you want more. Cherries and rhubarb with chicken, who knew?! It’s nothing short of amazing!
- Even my husband loved it! He’s a total steak guy through and through, but when I see him go back for seconds when I serve chicken I know I did something right!

Best Ever Balsamic Cherry Rhubarb Chicken
Ingredients
- 1 1/2- 2 lb chicken breasts halved lengthwise
- 5-6 sprigs fresh thyme
- 2 cups fresh sweet cherries halved and pitted
- 2 cloves garlic minced
- 3 tablespoons balsamic vinegar
- 1 cup chopped rhubarb fresh or frozen
Instructions
- Preheat oven to 400℉. In a cast iron skillet or baking dish arrange chicken without it overlapping.
- Place thyme springs under chicken breasts.
- In a medium bowl, combine prepared cherries, garlic, balsamic vinegar, and rhubarb. Mix well and then pour over chicken evenly.
- Bake for 25-30 minutes or until chicken is cooked through and juices run clear.
