Strata for breakfast? Eh, idk.
How ’bout a brunch casserole with layers of asiago cheese bread, sausage, and eggs that are then topped with a cheddar cheesalicious layer! Oh my gawd, it’s so amaaazing!
And I am not even an everyday breakfast-eating or casserole-loving kinda gal but I do like a great brunch every once in awhile. And this strata falls into that great brunch category every time. What I really love about this recipe is that it is super quick to prep. Some breakfast casseroles require a lot of prep work that it is almost necessary to put it together the night before, but not this one. This strata takes minimal prep work so there is no reason to bother getting it together the night before. BONUS!
I used asiago cheese bread for this recipe and it is a must in this strata! It gives the strata substance and more cheese flavor!👍

Recipe adapted from Mary Barber & Sara Whiteford’s Sausage and Cheddar Cheese Strata in the Bride & Groom First and Forever Cookbook.
Sausage, Egg, and Cheese Strata with Peppers and Onions
Ingredients
- 1 pound ground sausage
- 4 eggs
- 1 cup yellow onion diced
- 1 cup red and/or green bell pepper diced
- 2 1/2 cups half and half
- 1 teaspoon dried sage
- 3/4 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 5-6 slices bread cut into cubes-recommend asiago cheese bread
- 2 cups sharp cheddar cheese grated
Instructions
- Preheat oven to 350℉ and grease a 9x13x2 baking dish.
- Cook and brown sausage over medium-high heat. Add peppers and onions and cook until softened, another 3-4 minutes.
- Transfer sausage and veggies to a plate lined with paper towels to drain.
- In a medium bowl, whisk together the eggs, half and half, sage, salt, and pepper.
- For the bottom layer, arrange the cut up pieces of bread evenly.
- Spoon the sausage and veggies over the bread and then pour the egg mixture over the sausage.
- Sprinkle the cheese on top.
- Bake at 350℉ for about 30 minutes or until casserole is set in the middle.
- Let cool for 10-15 minutes.
