Hey all!
It is the season of soup & sandwiches! And this quick and easy turkey, avocado, and hummus panini has got it goin on! Mmmm!
Don’t you love vacations in fancy hotels that have all the amenities?! How long are your vacations usually?? A weekend? 5 days?? How ’bout a month?! We are currently living in a hotel for one month. One entire month. As in 30 days. With 3 little kids. Is this considered a vacation? Not quite. We are in a hotel, but I still have to get up and go to work everyday. Although it is definitely my own fault, I have been staying up until 11:00/11:30 just to have some “me” time after the kids fall asleep. I do not get much done during this time. I simply enjoy sitting and enjoying the quiet and dreaming about all of the changes to soon take place in our lives.
We are about to move to Kansas in a month and after the move I am going to be staying home with the kids. Wait, what?! Yes, that’s right! I am no longer going to be working full-time. I get to stay home with the kids and focus on them and 3 Scoops of Sugar!! I am SOOO excited!!
Back to these paninis…they sure hit the spot. Two small appliances made it with me to the hotel: 1) My keurig 2) The Panini Grill. I could live very well with just those 2 things! ๐ My keurig coffee maker gets me up and going in the morning and my panini grill gets me re-energized in the evening to get all the things done I need to, like sitting and daydreaming. Ha! I am appreciating the fact that it takes me approximately 3 minutes to pick up the toys in this hotel suite as opposed to the usual 45 minutes it would take me in our house.
Paninis are perfect hotel kinda food…the reasons are threefold. ๐
- They take 5 minutes to make.
- ย They are super delicious
- You can switch up the ingredients a bit for a completely different tasting panini.
This hotel living isn’t so bad after all! All smiles around this table!
Quick & Easy Turkey, Avocado, & Hummus Panini
Ingredients
- 4 slices whole wheat bread
- turkey slices
- 2 slices provolone cheese
- 2 tablespoons miracle whip
- 2 tablespoons hummus
- loose leaf lettuce
- 2 roma tomatoes sliced
- 1/2 avocado sliced
Instructions
- Preheat panini grill to medium heat.
- Spread 1 tablespoon of miracle whip and 1 tablespoon of hummus each onto one slice of bread. Add lettuce, slice of cheese, turkey, avocado, and tomato on top of bread. Top with remaining slice of bread.
- Place on panini grill and heat to desired doneness about 5-8 minutes. Repeat as needed.
- Remove from panini grill and serve with your favorite bowl of soup.
- Enjoy!
