A lot of things in our house these days are super good.
Reese, our 3-year-old, often reports that she is being “super good” and in church she loves reminding me that although she is talking at a normal level she indeed is being super quiet. The girl also must have like a thousand Shopkins pieces and they are all “super cute.” I love her language. Everything is “well we did it last day,” and “if i be nice i get a tweet!” I love it.
Well today we are talking about these Super Good Pineapple Coconut Smoothies that are in the house!! They are smooth, creamy, and with just the right amount of thickness. I have never been one to wake up and make a smoothie aka Cameron Diaz in What Happens in Vegas (SMOOTHIES!!!) but these are good enough to replace my coffee in the morning. I am being so serious right now.
The other toy I got for Christmas besides my Instant Pot was a Blendtec (affiliate link) so you can imagine how much fun I am having with both of them. Between the smoothies and the creamy roasted cauliflower soup I recently made from Love Real Food (affiliate) by Kathryne Taylor I have been super loving my new blender. Sorry, everyone in our family is about the super this and super that lately and it just kinda rolls off the tongue without even thinking about it!

Pineapple
Coconut yogurt
Coconut milk
Ice
Banana

Super Good Pineapple Coconut Smoothies with granola
Ingredients
- 1 1/2 cups cubed pineapple
- 1/2 cup coconut yogurt
- 1/4 cup coconut milk
- 1/2 banana
- 2 cups ice
- granola and couple banana slices for topping optional
Instructions
- Add first five ingredients to blender and blend until smooth.
- Pour evenly into two glasses.
- If desired, top with granola and banana slices.
- Enjoy!!
