It’s time to enjoy a plate of this delicious shrimp and pasta that is full of all the lemony garlic flavor you can handle!
I have noticed the fam isn’t too crazy about dinners with zoodles only but when combined with pasta they are a hit! Prior to this recipe, I have never felt like my shrimp pasta recipes turned out like I wanted them too. But this one, is 100% legit. I love it, the hubs loves it and the kids well they are still unsure about the green noodles. Nothing gets by them!
But if it means we get in a few more veggies for the day + I get to use the spiralizer then zoodles are happening! Plus they are so pretty. And who doesn’t like to eat pretty food?!
This lemon garlic shrimp pasta has so many great flavors with the addition of red pepper flakes, fresh basil, and fresh thyme. The squeeze of lemon at the end is my fav to add the perfect final touch!
This dish kind of makes me laugh because it reminds me of all the previous attempts at coming up with a great shrimp pasta recipe and just never being 100% satisfied with any of them. And I kind of just added some herbs here and seasonings there and it came together so great!
I do recommend using good quality shrimp over the frozen version. But the price does escalate so if frozen is what you can do, then frozen works too!
We eat at home a lot, like A LOT but the other night we grabbed some Runza on our way home from Omaha and it cost us $30. THIRTY DOLLARS!?! So much for fast food being cheap. It’s always delicious but don’t tell me you can’t buy some healthier ingredients to get dinner ready for cheaper than that.
It’s really the little things that excite me, obvi, but I love that I have a new recipe to keep on repeat! I like switching things up pretty often but there’s still those recipes that I cook on a regular basis such as eggs for dinner(LOVE!), pizza, spaghetti(Collin’s fav), steak (Parker’s fav-$$), and Reese TBD because she still claims Mac n Cheese is her favorite. 😏
Lemon Garlic Shrimp with Whole Grain Pasta + Zoodles
Ingredients
- 8 oz whole grain spaghetti
- 1/2 cup pasta H20
- 1 tbsp olive oil extra virgin
- 4 tbsp butter divided
- 4 cloves garlic minced
- 1 tsp red pepper flakes
- 1 lb shrimp deveined, raw or cooked
- 1 whole zucchini spiralized
- 4 leaves fresh basil torn or chopped
- 2 sprigs fresh thyme leaves only
- 1 whole lemon juiced
- 1/4 tsp kosher salt
- 1/8 tsp black pepper
- 1 Parmesan cheese grated or shredded
Instructions
- Bring a large pot of salted water to a boil. Add whole grain spaghetti and cook 1-2min less than al dente. Drain pasta EXCEPT for 1/2 cup to RESERVE FOR LATER, and set aside
- In a large skillet, heat 1 tablespoon olive oil and 2 tablespoons butter over medium heat. Add garlic, red pepper flakes and stir.
- Add shrimp and cook, stirring occasionally. If using raw shrimp, cook until they become pink and if using already cooked shrimp cook 1-2 minutes until heated through.
- Add zoodles to skillet and stir. Add fresh basil, thyme, salt and pepper and pasta at this time along with 1/2 cup reserved pasta water. Increase heat to a simmer and cook for 3-5 minutes.
- Squeeze juice of lemon over pasta and add remaining 2 tablespoons butter, and toss pasta until melted. Serve warm and topped with grated parmesan cheese.
