Meatloaf, shmeatloaf. C’mon we can do better than that! But wait a minute, sometimes I don’t want to do better than that because meatloaf (this meatloaf) has been a top comfort food request from my husband since we have been together. Just like the hamburger soup, I have been eating this since I was about 6 years old and guess what I don’t ever want to change a thing about it.
EXXXXCCCCCEEEEPT, I did. You wanna know why? I dried the meatloaf out on purpose so that it would stay together for the pictures and you may already be thinking, I can do meatloaf better than that. It looks dried out. Well it was, but I did that on purpose and I promise I will give you the actual real recipe! 😉 Because it’s 100% on top of this world. Does it look it? Probably not, because meatloaf isn’t very photogenic if you can’t already tell. That is the #1 reason I haven’t put it up on my blog. Meatloaf is just meatloaf. But then again it isn’t because we never have any left over to make meatloaf sandwiches the next day. Ugh, maybe someday…
Another reason I honestly haven’t put meatloaf on my blog is because I have this vision that I want to keep it classy. My husband has been telling me to put this recipe on here since well, I started blogging. And I just didn’t see meatloaf fitting in well.
It’s just nonsense. All of it is don’t ya think?! First I don’t want to post my meatloaf, then I make the dried out version so it stays together for pictures, then during editing my photos I am like hmmm looks dried out. However, the original Beef Mushroom Loaf recipe like it’s named in my recipe box is unbeatable and that’s why I am posting this today!! Just trying to help keep your home cooked meals rockin! And that my friends is why I am calling this Keepin It Classy Meatloaf just to make sure everyone now knows that this meatloaf is classy and fits in with the rest. 😉

Keepin It Classy Meatloaf
Ingredients
- 1-4 oz can chopped mushrooms
- Milk
- 1 slightly beaten egg
- 1 1/2 teaspoons Worcestershire sauce
- 1/2 teaspoon dry mustard
- 1 teaspoon kosher salt
- Dash of pepper
- 1 1/2 cups torn soft sandwich bread crust removed
- 2 lb lean 85/15 or higher ground beef
Instructions
- Preheat oven to 350℉.
- Drain mushrooms, reserving liquid. Add enough milk to mushroom liquid to make 1/2 cup.
- In a large mixing bowl combine the liquid from the mushrooms, egg, Worcestershire sauce, salt and pepper, dry mustard, and bread crumbs. Let stand about 3 minutes.
- Stir in beef and mushrooms. Mix lightly but not thoroughly.
- Shape into loaf in 13x9x2 inch baking dish.
- Bake 60-70 minutes or until internal temperature reaches 160℉.
