Waffles or pancakes?
I am 100% a waffle kinda gal. I appreciate a nice stack of blueberry pancakes just like the next person but if they are up against a waffle…the waffle will almost always win.
The Waffle Story
I have been loving waffles ever since I was a kid. My dad always got our breakfast ready for us as kids and during the week it was either Eggo waffles or Toaster Strudels. You just couldn’t beat either of those two choices in my young mind. Dad always got each little pocket with just the right amount of I Can’t Believe It’s Not Butter so each bite was delectable as the last. I always left that middle square section for last and savored it!
Well after college, my parents got me a nice waffle iron and I went nuts with it. Waffles are always awesome right after you grab ’em off the iron but they were so much better it you froze them and then popped them in the toaster so they got that perfect crispiness to them.
Once I got married, I up’d my waffle game even more and started making waffles from scratch. I have never looked back! These Healthier Waffles with Cinnamon Apple Topping are also another good choice especially for fall!!
Times to Enjoy the Savory Waffles
Nearly everyone enjoys a good waffle stacked with berries, whipped cream, and all the syrup one waffle can appropriately hold. However, I think you are going to love these savory waffles just as much! When no one is looking, I just fold mine in half like a taco and pretty much scarf it down!

- On a Sunday afternoon for the upcoming week so breakfast is fast and easy and wholesome. The hash browns are homemade from red potatoes so pat yourself on the back for this one!
- Saturday morning brunch when everyone is slow to wake up and you are in desperate need of a meal to kill both breakfast and lunch at the same time. Again…pat yourself on the back.
- Wednesday (or any other day of the week) evening because breakfast for supper is the best kind of supper at least once a week.

Red potatoes
Cheddar Cheese

Parsley (optional)
Ham + Additional Cheese for Topping
Homemade Hash Brown, Egg, and Cheese Waffles
Ingredients
- 5 cups red potatoes peeled and grated (about 10-12 potatoes)
- 1 1/2 cups mild cheddar cheese + more for topping
- 5 eggs
- 1/4 cup milk
- 1 tablespoon fresh parsley finely chopped + more for garnish
- Pinch Kosher salt + Black pepper
- Toppings: diced ham grated cheddar cheese, chopped parsley
Instructions
- In a medium bowl, add the eggs and milk and whisk until well combined. Set aside.
- In a large bowl, add the shredded potatoes, cheddar cheese, salt and pepper, and parsley. Mix well. Pour in the eggs and milk and stir until the milk and egg mixture is evenly incorporated into the potatoes and cheese.
- Preheat a greased waffle iron to medium high heat. Add 1/2 cup of batter to the waffle iron or enough batter so it is 1/2 inch from the edge of the waffle iron. Close and cook until waffle is golden brown and remove with tongs. Be sure to stir batter well after each time. Place waffles on a cookie sheet in a warmed oven if eating right away. Otherwise, place in a freezer bag and store in the freezer. When you are ready to eat them, toast to perfection!
- Top with additional cheddar cheese, chopped parsley, and diced ham if desired.
