Fish Is On The Brain
Salmon again?! I know, I know. I can’t help it.
When it starts to warm up outside this is what my brain does… Sun ➡️ Summer ➡️Summer Food ➡️ Grill Time ➡️ Seafood ➡️ Salmon ➡️ Salmon ➡️ Salmon Salad ➡️ Salmon burgers..etc. I think you get the picture!
But if you remember from my last salmon post salmon can boost memory so maybe I am just remembering to eat it on a regular basis. 😉
You see, the thing is I am sort of a salmon connoisseur. I have been eating salmon at restaurants since I was about 18 years old. My mom cooked it often as I got into high school and then it began. Pretty sure I didn’t eat much of it during the college years unless I went out to a nice restaurant. During college, any fish I ate pretty much came from a can. However, after college, my salmon tasting abilities kicked into gear. I began cooking it for myself and let’s just say it was ok. At that point, I was so afraid of fish undercooked that it was a bit on the dry side. Yet, I was so proud I cooked salmon for myself that I didn’t even care.
But fast forward a few years and my soon to be husband was taking off to Kansas City for nurse anesthesia school. Weekend getaways to KC meant great entertainment and great food all around! Any restaurant we would hit, I was ordering fish because I loved discovering how different restaurants were preparing it. It was always topped off with some amazing sauce and veggies. My favorite place to get salmon was definitely The Capital Grille. Don’t get me wrong, the other 100 restaurants we went to had fabulous fish as well. The Capital Grille just blew me away. The atmosphere was perfect, the food was absolutely amazing and that place just always stands out to me looking back.
And now that I’m thinking back to those years I so wish I was at Room 39 right now just chilling out enjoying some awesome food!
Fish For Health
Healthy eating. What does that mean to you these days? Does it mean eat to live vs live to eat? Whole 30 Diet? Paleo? Gluten-free? Low fat? Low carb? We all have our own vision of what eating healthy means that comes from our own experiences and education.
If I had to sum up healthy eating in one word it would be moderation. There is no perfect food. Some people may disagree with me but I believe it is the combination of foods that provide you with the right balance and variety to give your body the nutrition it needs to sustain life.
What does salmon provide? Well it is a good source of protein and healthy fats. More specifically salmon contains omega 3 fatty acids, a type of polyunsaturated fat which may promote lowering of cholesterol. For every 3 ounces of salmon, your body gets 11 grams of fat, 0 gram of carbohydrate, and 17 grams of protein. A great food choice to incorporate into your diet if you like to eat fish. For a visual of 3 ounces of salmon, each salmon cake contains a little less than 3 ounces.
Healthy Salmon Cakes in 20 Minutes
Ingredients
- 8 ounces salmon filet
- 1/2 cup panko
- 1 egg
- 1/2 cup spinach
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- 1 avocado sliced
Fish Rub
- 1 teaspoon chile powder
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon ground cinnamon
Sriracha Mayo
- 1/2 cup Miracle Whip light
- 1 garlic clove minced
- 1 tablespoon Sriracha sauce
- 1/2 tablespoon lemon juice
- Pinch salt
Instructions
Fish Rub
- Combine all fish rub ingredients in small bowl and set aside.
Sriracha Mayo
- Combine all ingredients in a small bowl and refrigerate until later use.
Salmon Patties
- Remove skin from salmon.
- Add salmon, panko, egg, spinach, and lemon juice to bowl of food processor. Pulse until mixture is smooth.
- Shape mixture into patties that are about the same thickness. Sprinkle fish rub on both sides of salmon patties and rub in so it sticks to the patties. Use about 1/4 teaspoon rub per side. You will probably not use all of the rub.
- In a large skillet or cast iron pan, heat olive oil on medium heat. Add salmon patties to skillet. Cook for 4 minutes and then flip patties and cook for about another 4 minutes.
- Serve patties topped with avocado slices and Sriracha mayo.
