We are in the middle of winter. What sounds good to eat? A hearty soup filled with meat and fresh veggies! This recipe is one of my favorites people! A perfect combination of seasonings to add just enough spice to leave your taste buds asking for more. 🙂 It may even look like more of a stew, but I have been calling it hamburger soup since I was ten so I can not bear to change the name. This recipe makes a pot full, and I recommend making it as shown below because this is one of those soups that freezes nicely and tastes just as good the next day. One of the reasons I love this soup is how incredibly good it is for you, but it tastes so delicious you do not even realize it.

Of course today is Ash Wednesday so it was fish for dinner tonight. However, I savored every bite of this tasty soup a couple of nights ago. I am so glad my husband does not mind my desire to make soup nearly every week in the winter…it just warms me up on these cold winter nights. And to top this soup off my husband popped a couple of pieces of garlic bread into the oven and it totally hit the spot.
Hamburger Soup
Ingredients

- 1 lb ground beef
- 1 teaspoon dried chopped onion
- 2 cans beef broth
- 14 oz bag Dole Classic Coleslaw
- 3-4 potatoes diced
- 3 cans stewed tomatoes
- 1/2 cup raw rice
- 1 bay leaf
- 1/2 teaspoon dried thyme
- 1/2 teaspoon basil
- 1 Tablespoon Lawry's seasoning salt
- 1 teaspoon pepper
