I dare you to give these grilled BBQ meatballs a try! And since we are barely leaving our homes, it shouldn’t take much convincing to at least get outside and fire up the grill. Sauté some veggies and you’ve got yourself a delicious spring meal ready in no time.
We have been outside a lot lately between playing in the backyard and going to motocross tracks to ride and enjoy the fresh air. It is keeping us active and enjoying life.
I love grilling season. Between grilled burgers, salmon, and now grilled meatballs it is hard to beat these summer meals. This is one of those easy and quick summer meals that you are going to love for many reasons: 1) It’s done on the grill and stovetop so you don’t have to turn on your oven during those hot summer days, 2) it’s super simple and only has two parts because doesn’t everyone want to get back to relaxing in the backyard, 3) it’s taking meatballs to the next level, and 4) the meatballs only require 7 ingredients.
What’s In Them:
- Ground beef
- Salt
- Onion powder
- Garlic powder
- Eggs
- Panko
- BBQ sauce
How to Make Them:
Mix everything but the BBQ sauce in a large bowl and mix up well with clean hands. Form into about 1 1/2-2 inch size meatballs and place onto skewers. You should be able to make about 25 meatballs.
Clean your grill and oil the grates with non-stick spray or brush with olive oil so the meatballs don’t stick. Preheat the grill to medium-high heat. Grill them for 12-16 minutes. Flip them once and brush the meatballs with BBQ sauce once when you place them on the grill and once after flipping.
Our kids absolutely loved these and honestly it’s hard to get them to love anything sometimes. So I was so ecstatic when everyone came to the table happy. A total win! This recipe is a new favorite and we will be having these a lot this summer.
While the meatballs are grilling, sauté the veggies and it’s as simple as that. Some easy veggies on the side is one of my favorite summer sides. A plate of meatballs + sautéed mushrooms, peppers, and onions is exactly my kinda meal! My husband was a total fan of this meal too.
There’s no need to wait until the weekend for this meal. You need this in your life as soon as possible. I mean it’s simple, quick, and isn’t that all of the persuasion you need for a good meal?!

Grilled BBQ Meatballs with Sautéed Veggies
Ingredients
Grilled BBQ Meatballs
- 2 lb lean ground beef
- 3/4 cup BBQ sauce
- 1/2 tsp kosher salt
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 2 eggs
- 3/4 cup panko crumbs
Sautéed Veggies
- 2 tbsp olive oil
- 1 green bell pepper, sliced ribs and seeds removed
- 1 red bell pepper, sliced ribs and seeds removed
- 1/2 yellow onion, sliced
- 4 oz mushrooms, sliced baby bella or button
- 1 pinch kosher salt
- 1/8 tsp black pepper
- 1/2 tbsp apple cider vinegar
Instructions
Grilled BBQ Meatballs
- Clean grill grates and oil generously with non-stick cooking spray or brush with olive oil. Preheat grill to medium high heat.
- In a large bowl, combine beef, salt, onion powder, garlic powder, eggs, and panko. Form into 1 1/2 inch-2 inch meatballs and place on skewers leaving space in between meatballs. Grill 12-16 minutes until meatballs are medium well to well done. Apply BBQ sauce just after placing skewers on the grill and again after flipping meatballs halfway through grilling time.
Sautéed Veggies
- Heat olive oil over medium heat in a large skillet. Add peppers, onions, and mushrooms to skillet tossing frequently with a wooden spoon. Cook 7-10 minutes or until veggies have softened. Add salt, black pepper, and vinegar, stir, and cook another minute or so. Serve alongside BBQ meatballs. Enjoy!
