There’s nothin quite like a summer salad!
I’m not even joking! I am all about the fresh chopped herbs these days. I am loving lots of dill and parsley on basically anything that makes it to my plate. I thought I hated fresh parsley but as it turns out it’s the Italian(flat leaf) parsley I’m not crazy about.
If it’s lunch time then you can bet I have the cutting board and chef’s knife out to chop up some stuff to arrange in a bowl! When it comes to big leafy greens and herbs they just taste better when they are all chopped up, ya know. Who likes trying to fit a ginormous spinach leaf in their mouth? Not meh.
I like lotsa color, lotsa texture, and everything needs to be chopped up well. Check below for the evidence!
Aside from all the wonderful things you are eating this summer, what else is going on in your life? Here, we are anxiously awaiting the 4th of July! The kids are going nuts over fireworks as in they want to fire them off all of the time. So, hopefully we still have some fireworks left by the time the 4th gets here!
Now that July is here, we plan to make the most of each and every day before August rolls around. That means we will be eating lots of lunches on the porch, going to the pool as much as possible, and enjoying all the summer nights in the backyard. The kids are really into catching lightning bugs lately and it totally reminds me of my childhood.
Back to the salad for a quick sec, I can enjoy this salad with just about anything but it definitely pairs great with pork tenderloin. You should give it a try!!

Favorite Summer Red Cabbage Salad
Ingredients
- 3/4 head shredded red cabbage ~8 cups
- 3 medium carrots grated
- 3/4 cup fresh parsley finely chopped
Dressing
- 1/4 cup apple cider vinegar
- 2 tablespoons lemon juice
- 2 tablespoons honey
- 1/4 cup olive oil
- 2 teaspoons dijon mustard
- 1 garlic clove minced
- 1/4 teaspoon kosher salt
- 1/4 teaspoon black pepper
Instructions
- In a large bowl, combine cabbage, carrots, and parsley. Mix well.
- Combine dressing ingredients in a small bowl or mason jar and whisk until blended. Pour over salad and toss until well incorporated.
- Serve or refrigerate until ready to use.
