Hey all, I’ve decided to finally make a comeback. I have not been creating much of anything for my blog and it’s time I get back to it. It has been a weird time. And I’m not talking about Covid or anything even related to it. I am simply referring to my lack of ideas relating to anything food. Usually I love being in the kitchen and creating new things. But that has just not been the case and so I decided to step away for just a bit. These quick and easy tuna melts pretty much sum up my food life situation lately. I want heathy, delicious, and as few ingredients as possible. Yet, that kind of sums up what I want all of the time.
I have had some of the best months of my life the last few months with my little fam. We have been on the road a lot going to motocross races and I wouldn’t change it for anything. The conditions can be hot, humid (yes I’m looking at you Oklahoma this past July), windy, rainy, you-name-it but at the end of the day my husband and I still glance at each other and rattle off how we just had the best day ever! It’s the moto culture, the people, the riding, all of it that makes it so awesome. If you know, you just know.
Fast forward to now and all my children are now in school and it’s just me at home. Great, right?! Well one would assume so but it’s actually so different I’m having a hard time getting used to it. Been job hunting so hard and have turned down a couple already. So here I am, back to doing what I know and love.

What Makes a Great Tuna Melt
- Fresh Lemon Juice
- Fresh Dill but dried will work just fine too!
- Shallots! Yes, that’s right forget the celery. Add the shallots!
- Freshly grated Parmesan cheese
Favorite Quick and Easy Tuna Melts
Ingredients
- 1 english muffin
- 3 oz can tuna, drained
- 2 tbsp miracle whip or mayo
- 1 tbsp shallot, chopped
- 1 tbsp fresh lemon juice
- 1 tbsp fresh dill or 1 tsp dried dill weed, divided
- 1-2 tbsp grated Parmesan cheese
Instructions
- Preheat oven to 400℉. In a small bowl combine tuna, miracle whip, shallot, lemon juice, and half of dill weed. Mix well until ingredients are incorporated.
- Cut english muffin in half and place in baking dish cut-side up. Spoon tuna salad equally over each half of english muffin. Sprinkle parmesan cheese over the top followed by the remaining dill weed. Bake for 9 minutes.
