The Everyday Mediterranean Salad is a salad you can get excited about over and over again. It’s made with hearts of Romaine, cucumber, kalamata olives, chickpeas, red onion, and plenty of feta cheese.
Spring is here and I am taking advantage of every minute. And by that I mean I am being a good friend to the outdoors thanks to my kids’ endless soccer games! Oh, and I am eating lots of fresh veggies with no regrets thanks to this incredible Mediterranean Salad!
Note: the very important husband tested this and gave it a whopping 10/10! Be prepared to like this one you guys. It’s going to be making its way back into our kitchen frequently this spring. I’m not sorry.

Whatever you have coming up this spring, you are going to want to add this to your menu. So serious right now. I’m excited we have it in the fridge so I can eat it again for lunch tomorrow!
This salad has so much substance to it. It’s bound to make other salads look sad and too boring. And there’s straight up something magical about a little vinegar, olive oil and then throwing in some pink salt and pepper.
Here is a list of the ingredients:
- Cucumber
- Cherry Tomatoes
- Apple Cider Vinegar
- Garlic
- Olive Oil
- Chickpeas
- Kalamata Olives
- Red Onion
- Fresh Parsley
- Romaine Lettuce
- Feta Cheese
That list just screams fresh yummy goodness, don’t ya think?!
You can even add some pita bread on the side with a spoonful of hummus. That would be next level deliciousness.
Hope you are enjoying your spring! My kids are getting so antsy about summer. I have to say I am too but I am also realizing how much energy we are going to be burning off on a daily basis at the splash pads, parks, backyard, more parks, pool, motox tracks OMG!! I’m already tired from thinking about it.
Hoping I will soak up enough Vitamin D to get my level in the normal range and give me an extra boost in the energy department!!

Everyday Mediterranean Salad
Ingredients
- 1 cucumber peeled, halved lengthwise, seeded and cut into 1/2 inch pieces
- 10 oz cherry tomatoes quartered
- Kosher or Pink Salt
- Black Pepper
- 2 cloves garlic
- 3 tbsp apple cider vinegar
- 3 tbsp olive oil
- 1 can chickpeas rinsed, drained
- 1/2 cup Kalamata olives pitted
- 1/3 large red onion, finely chopped
- 1/2 cup fresh chopped parsley
- 1 Romaine lettuce heart cut into 1/2 inch pieces
- 1 cup feta cheese crumbles
Instructions
- Toss cucumber and tomatoes into a colander and add pinch salt and let drain for 10-15 minutes.
- In a large bowl, whisk vinegar and garlic together. Slowly add olive oil while whisking continuously. Add cucumbers and tomatoes, chickpeas, olives, red onion, parsley and toss together well.
- Let sit for 10-15 minutes while chopping up Romaine lettuce.
- Add Romaine lettuce and feta cheese and gently toss salad to combine ingredients. Serve and add salt and black pepper to taste.
