A delicious and easy-to-make barbecue chicken bowl with charred corn, jalapeño lime crema, and chips topped with fresh chives, lime wedges and radishes.
I absolutely love anything in a bowl recently. Not talking about soup anymore. We are talking if it was once in a burrito, taco, sandwich then it’s gonna be killer in a bowl topped with more veggies and less carb-y foods. Don’t get me wrong, I still add in carbs just not so much. That in a nutshell is the tastiest meal for me these days. Whaddya think??

It’s so simple and yet so satisfying. No fighting anyone else over the best chips smothered in all the good stuff. Nope, just you and your beautiful bowl of nachos. Just the way it should be. Did I just take it a little too far? Maybe.
But hey I think I deserve my own chicken nacho bowl once in awhile. After all, I share my bed with three kids most nights…

I really love these bowls for dinner. They have tons of flavor and crunch to make me feel like I am eating something substantial. And yet they are perfect for lunch too. The reason is this: I stand at our kitchen island to eat lunch.
Feeding a 3 and 4 year-old lunch seems pretty straightforward. You fill their little plates up and they eat them, right? Ha! I am a mom turned waitress once those two sit down to eat lunch. Mom, I need juice. Mom, I need goldfish. Mom…mom….mom…MOM! I need peanut butter on a spoon, but I also need another spoon for my applesauce. This is all very real. The funny thing is I can’t help but smile every time they sit down for lunch because I can pretty much “call” the next thing that’s coming out of each of their mouths.
So, for that reason I stand to eat my lunch. And this chicken nacho bowl is the perfect dish for that! But it’s great for those sit-down dinners as well!!!

Easy Chicken Nacho Bowls
Ingredients
- 1 lb chicken breasts sliced in half lengthwise
- 1/4 cup BBQ sauce
- 3 8 '' Tortillas*
- 1 tablespoon olive oil
- kosher salt
- 1 cup frozen corn thawed
- Serving: lime wedges fresh chopped chives, sliced radishes
Jalapeño Lime Crema
- 1/4 cup light sour cream
- 1 tablespoon lime juice
- 3 tablespoons light miracle whip
- zest 1/2 lime
- 1/4 teaspoon salt
- 1/2 jalapeño seeds and membranes removed
Instructions
- Preheat oven to 350℉. Cut tortillas into 8ths like a pizza and place on a rimmed baking sheet. Lightly brush with olive oil and a pinch of kosher salt. Bake for 10 minutes or until crispy. Set aside.
- Meanwhile, place chicken breasts in baking dish with the barbecue sauce and mix with tongs until well coated. Bake at 350℉ for 22-25 minutes until cooked through. Let cool a few minutes and then shred.
- Place a large pan over medium to medium-high heat and cook corn 1-2 minutes until lightly charred.
- In a medium bowl, combine the chicken, corn, and 1/4 cup jalapeño lime crema. Add chicken mixture to bowls. Top with fresh chopped chives, lime wedges and sliced radishes and more lime crema if desired. Serve with chips. YUM! Enjoy.
Jalapeño Lime Crema
- Add all ingredients to a small food processor and process until smooth
