Hello there! So now that it is May, I pretty much equate that to…IT IS SUMMER!! YEAH!! And what does summer bring for us all? It brings SUN (STAY AWAY SNOW, WE ARE DONE WITH YOU!), LONG DAYS AT THE POOL, AND EASY BBQ CHICKEN!!! This barbecue chicken is so simple, which is just an added bonus because you can not mess this stuff up. It is just that simple! And when it is summer, who wants to deal with complicated suppers…uh not me! You? I didn’t think so.
Here is a quick rundown of the steps taken to make this BBQ chicken> arrange chicken in greased baking dish>top chicken with onion slices or rings like I prefer and dot with olive oil>mix 6 ingredients in bowl and pour over the top of chicken> bake covered in oven for 2 hours and then uncovered an additional 15 minutes=MOST AMAZING BBQ CHICKEN EVAA!
I made this two days ago and my husband is already asking for it again! It is our 5 year anniversary today. I should probably be a good little wife and make it again! But according to google, I am supposed to be buying him wood for the 5th anniversary. Hmmm..maybe I could do that and he would make me a wood board for my photography backgrounds! 😉 Always thinking of him! Ha! I better stick with the BBQ Chicken for today!
This is the perfect summer meal! Easy peasy barbecue chicken with grilled corn…yes I will have me some of that any day! Just reminds me that it is summer and in summer you eat lots of barbecue. Or you should! And if you are like us, you eat it outside on the deck to enjoy the fresh air…and who else do you think wants to enjoy your barbecue chicken? The bugs. 🙁 It was within 5 minutes that we were sharing our wonderful barbecue chicken with a dozen bugs and our 4-year old kept repeating, “Mommy, I think I just ate a fly. Is that a bug (referring to the blackened kernel of corn on his cob)? Mommy, we shouldn’t eat outside so much anymore because I think I just ate another fly?!” Yes, this is what the first warm day brings at our house! 🙂
So, if you like good tasting food and you like easy to fix food, then this recipe is for YOU! There is nothing like a juicy piece of BBQ chicken on a warm summer (ya it is already summer in my book) day! So go getcha some! 😉
Easy BBQ Chicken
Ingredients
- 1- 1 1/2 pounds chicken thighs or any chicken pieces
- 1/2 yellow onion cut into rings
- 1-2 tablespoons olive oil
- 2 tablespoons cider vinegar
- 1 tablespoon Worcestershire sauce
- 3 tablespoons brown sugar
- 1/2 teaspoon paprika
- 1 cup ketchup
- 1 cup water
- salt and pepper to taste
Instructions
- Lightly oil a 9x13 baking dish with Pam or non-stick spray. Arrange chicken thighs in a single layer and cover with onion. Dot chicken with olive oil.
- Combine vinegar, worcestershire sauce, brown sugar, paprika, ketchup, and water in medium mixing bowl and blend together. Pour evenly over chicken thighs.
- Bake covered with foil for 2 hours and an additional 15 minutes uncovered.
- Let cool for 5-10 minutes and serve.
- Enjoy!
