What gets you through the winter months? You know, like what keeps you going even through the bitterly cold and windy days or up at dawn work till sunset kind of days? For me it’s a few things I suppose. But to be dramatic and a pinch of inspiring it’s wholesome and healing food like salads and things that are green. This best EVER Caesar salad with parmesan cheese crisps is one of those things.
This caesar salad is packed full of nourishing and tasty things. It is filling and is totally next level with the parmesan cheese crisps. Plus, it could work perfectly as a dinner salad with the addition of some juicy grilled chicken, salmon, or shrimp. I’m seeing each one of those variations in my near future. Salads are an interesting thing because they can be as simple or complicated as you make them. They can be light or filling. It’s all your choice based on how you choose to create it and I think that’s why I love them so much.
Today I made a purchase that I have been wanting to make for like two years now and gosh I don’t know why I waited so long. I bought a 100mm lens for my Canon and I guess it’s because I have this huge desire to improve my photos way more than I have been. And I am so pumped!! I cannot wait to get it. There’s another lens I want too but it’s way more expensive than the 100mm so for now the 100mm will do but I hope it’s not another two years before I get the next.
My nifty 50 has been pretty reliable for me to get going with my blog but it’s time to moooove on to bigger and better things. Speaking of bigger and better this caesar is definitely better!
Caesar Salad Ingredients:
Romaine lettuce
Red onion
Avocado
Olives
Good quality croutons
Parmesan Cheese Crisps
Homemade caesar dressing:
Mayo
Garlic cloves
Dijon mustard
Lemon juice
Worcestershire sauce
Kosher salt
Black pepper
Extra virgin olive oil
Water
A couple *tips* on this caesar salad with parmesan crisps-
1) Cube the avocado instead of slicing it for this once so it’s more dispersed in the salad and not one person gets a bite of avocado you know what I mean?
2) Add croutons + parmesan cheese crisps because the textures are completely different and the more texture you can add to a salad the better.
3) Keep the slices of red onion pretty thin so it doesn’t seem to overwhelming in the salad or you can chop it if you prefer.

Best EVER Caesar Salad with Parmesan Cheese Crisps
Ingredients
Caesar Salad
- 8 cups Romaine lettuce, chopped
- 1/4 red onion, sliced thinly
- 1/2 cup black olives drained
- 1/2 avocado, cut into cubes peeled, pitted
- 1/2 cup croutons
- parmesan cheese crisps
Parmesan Cheese Crisps
- 2 cups freshly grated Parmesan cheese
Caesar Dressing
- 1 cup mayonnaise
- 2 cloves garlic
- 1 tsp dijon mustard
- 1 tbsp lemon juice
- 1 tsp Worcestershire sauce
- 1/4 tsp kosher salt
- 1/8 tsp black pepper
- 1/4 cup extra virgin olive oil
- 1-2 tbsp water
Instructions
Parmesan Cheese Crisps
- Preheat oven to 400℉. Line a baking sheet with parchment paper.Spread out shredded cheese into a thin layer on baking sheet making the layer even and just enough so you can't see through the cheese in most places. See above picture for reference. Bake for 3-5 minutes. Allow cheese to cool COMPLETELY before breaking it into pieces.
Caesar Dressing
- Combine first seven ingredients into a mini food processor and process until smooth. Add olive oil and pulse until incorporated. If needed add 1-2 tbsp water to thin dressing down. I usually add 2 tbsp water to make dressing more pourable. Refrigerate until ready to use.
Caesar Salad
- Toss Romaine in a med-large bowl with the red onion, black olives, and croutons. Add cubed avocado and caesar dressing just prior to serving. Top with parmesan cheese crisps and a couple grinds of fresh black pepper.
