Let’s talk…anyone needing a boost as you roll outta bed, hair a hot mess, and trying to open that one eye needed to mosey out to the kitchen in order to hit the on button to quickly make that first cup of coffee?! The answer= blueberry bliss energy bites!
Low and behold, before you know it two hours have passed and that cup of coffee is still sitting beneath the Keurig. Yep, happens to me more than I would like. Weekend life is not all about sleeping in late, relaxation, pull out your favorite book kind of days. No, no, weekend life at our house is about late nights, early mornings, laundry to fold, kids that eat a meal and then are hungry an hour later.
Blueberry Bliss Energy Bites= AWESOMENESS
These blueberry bliss energy bites have the boost of power you need on those days you are looking for a little bit of sweet blueberry granola goodness. I am going to divulge the secret ingredients, so grab a pen and start writing…
1) 1 ¾ cups rolled oats
2) ¼ cup coconut oil
3) ½ cup dried blueberries
4) ¼ cup chia seeds
5) ½ cup pecans
6) 5 tablespoons maple syrup
7) ½ teaspoon cinnamon
That is it! You are seven ingredients away from creating these perfect little blueberry bites! Are they granola, yes! Are they power boosting, yes! Do they help curb those afternoon cravings, yes! These blueberry bites might be small but they are huge in texture and flavor! LOVE THEM! They are just so cute too!
This recipe does call the attention of health nuts so if you can find your inner health nut self then this recipe is for YOU! Blueberry Bliss Energy Bites
Ingredients
- 1 ¾ cups rolled oats
- ¼ cup coconut oil
- ½ cup dried blueberries
- ¼ cup chia seeds
- ½ cup pecans
- 5 tablespoons maple syrup
- ½ teaspoon cinnamon
Instructions
- 1. In food processor, pulse rolled oats and pecans separately. You still want some coarseness to both ingredients. It took me about 15 times for each ingredient.
- 2. Add all ingredients to a large bowl and mix with rubber spatula. I used my hands also to combine ingredients.
- 3. Shape into balls and place on cookie sheet to freeze for 30 minutes.
- Optional: microwave 1/2 cup white chocolate chips for 30 seconds at a time until melted. Stir with spoon and dip balls into white chocolate to freeze.
- I store these in the freezer to keep their shape and I think they taste even better frozen!
