Blackberry oat bars with chia seeds, white whole wheat flour, buttery goodness, and sweetened with brown sugar and honey. They are just a tad sweet but not at all overwhelming for breakfast. Let’s talk about these Blackberry Chia Seed Bars…
Blackberries are one of the best fruits. They are sweet, a little juicy, and they pack a lot nutrients. They are perfect berries for breakfast in my opinion. And after baked into delicious oat bars they become heaven.
These bars do not take a ton of ingredients which is one of the best kinds of recipes. I like simple and I like delicious and when you get both, life is good. I like to coarsely chop the blackberries for this recipe. I used a manual food processor but it would also work to pulse them just a few times with a regular food processor. It also is your preference on how chopped you want to have the blackberries for the bars. I wanted to do it this way so that a few of the blackberries were still whole.
Part of my reason for doing so was for the aesthetics because I wanted some blackberries to show through the crumb topping for photos. So it really does not matter if your blackberries are more chopped up than the ones shown below.
These bars are not a dessert bar by any means but I still love enjoying them for dessert. I just mean they are not overly sweet. Sweetened just enough for those that love something sweet for breakfast. They would be over the top good with a little scoop of vanilla ice cream or whipped cream if you decide to eat them for dessert.
I would be lying if I said I didn’t absolutely LOVE blackberries. I basically work them into recipes in whatever way is possible. Here is the evidence:
You can have your blackberries and eat them too in your side, main dish, and dessert! It may be a bit much to do all three at the same meal but I won’t judge. Blackberries, indeed, are amazing. And these Blackberry Chia Seed Breakfast Bars are not going to let you down.

Blackberry Chia Seed Breakfast Bars
Ingredients
- 1 cup old fashioned oats
- 1 cup white whole wheat flour or all-purpose
- 1/2 cup brown sugar
- 1/2 cup unsalted butter cut into sections
- 1 tsp baking powder
- 16 oz blackberries
- 3 tbsp honey
- 1 tbsp lemon juice
- 1/2 tbsp cornstarch
- 1 tbsp chia seeds
Instructions
- Preheat oven to 350℉.
- Using a stand-up mixer, combine the oats, flour, brown sugar, baking powder, and cold butter. Mix on low until ingredients are incorporated. Portion out 1 3/4 cups and set aside. Pat down remaining oat mixture into bottom of 8x8 or 9x9 pan with the bottom of a clean measuring cup. Bake x 10 minutes.
- Meanwhile, coarsely chop the blackberries using pulse mode on food processor or a manual food processor. Transfer to a medium bowl and add the honey, lemon juice, cornstarch, and chia seeds and stir.
- Spoon blackberry mixture over crust evenly. Add the remaining crumb mixtures over the blackberries in spoonfuls. Spread it a bit to make it even and if desired leave a few spots without the crumb mixture to allow blackberries to show through. This is just for looks though. Bake x 30 minutes or until light golden brown. Allow to cool completely before cutting into bars.
