Runzas are a hot thing around this area. They are a perfect fall game day food choice. Just ask any Nebraska football fan.
Just drive by a Runza® restaurant around lunch time and you will probably mistake it for Panera at first with the line to the street.
However, being the foodie that I am I love making homemade runzas! My 6 year-old absolutely loves them!!! And in case you’re wondering, my husband finished off the rest of these ground turkey runzas the night I made them. They are that delicious!
For all you cheese lovers, this shot is for you! I have nothing against cheese, I actually like cheese but in all my food photography classes I have never understood the obsession with cheese shots??? I actually think they look kinda gross, but apparently people go nuts over them. LOL.
For these homemade runzas, I prefer using frozen dinner roll dough and roll out the dough from two rolls per runza. I have used Rhodes frozen dough and HyVee brand frozen dinner roll dough and they both work great.
Just don’t forget to set the dough out ahead of time to thaw/rise.
The typical Runza® restaurant meal is a runza and fries or frings (fries with onion rings). However, I decided since I am aiming to make this meal a little healthier anyway let’s pair it with something our body will appreciate a little bit more like a fresh chopped salad!!
Salads are my creative outlet. I am always tossing in new things every day because yes we eat them almost every single day but they are never the same. So I dare you to try one of these amazing runzas with a salad on the side. You will be amazed!
Awhile back I made these runzas for the blog. They are great also but we, being my entire family, prefer these turkey runzas over the beef ones. Weird, huh!!

Frozen Dinner Roll Dough
Ground Turkey
Yellow Onion
Green Cabbage

Best Ground Turkey Runzas with Cheese
Ingredients
- 12 frozen dinner rolls such as Rhodes frozen yeast dinner rolls or HyVee frozen dinner rolls
- 1 pound ground turkey
- 1/2 yellow onion chopped
- 2 cups green cabbage chopped
- Pinch salt
- 1/4 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1 cup Mozzarella cheese preferably not the package already grated as it doesn't melt quite as nicely
Instructions
Let Dough Rise
- In a 9x13 baking dish, arrange frozen roll dough and let rise for 3-5 hours or according to package instructions.
Runza Prep
- Preheat oven to 375℉.
- In a large skillet, cook ground turkey and chopped onion for 7-10 minutes over medium high heat or until turkey is cooked through. Add chopped cabbage and cook for another 5-7 minutes to allow the cabbage to soften.
- Add salt, garlic powder, and black pepper and stir into mixture.
- Reduce heat to medium low, stir occasionally. Add cheese and mix in until melted.
- On a floured surface, roll out dough of two dinner rolls to ¼ inch thickness.
- Add ½ cup ground turkey mixture to center of dough. Bring sides of dough together over filling and pinch sides together all along opening. Tuck both ends under to make a rounded edge on both sides.
- On a greased baking sheet, place runzas seam side down. Spray tops of runzas with olive oil spray or non-stick cooking spray.
- Let rise 10 minutes on the baking sheet.
- Bake for 15-20 minutes or until runzas are golden brown.
