The spring and summer version of peanut butter blossoms which are a favorite of mine. These almond butter cookies are simply delicious. Easy and fun to make with kids and all 3 kids gave these a thumbs up!
Almond Butter
I don’t know what the holdup has been but I have never tasted almond butter before. Almond butter is amazing. I love peanut butter, but almond butter is well let’s just say I could eat it by the spoonful. Oh, and almond butter + cookies = a bit o’ heaven!
My 2-year-old actually asks for peanut butter on a spoon at lunch time. She saw me grab some out of a “different jar” and was skeptical at first. However, she ate the almond butter up just as fast as she eats the peanut butter. She’s a PB and (soon to be AB) eating machine!!
Cookies Get the Gold
I am a firm chocolate cookie lover. I can see a whole table of amazing desserts and I still turn to the chocolate chip cookie(s). What other cookie compares to the chocolate chip cookie? Well, that would be peanut butter blossoms at Christmas time. They just kick butt in the cookie world. And I can’t just make peanut butter blossoms all year-long because I would not appreciate them at Christmas time.
The Solution? Almond Butter Spring Blossoms!
Oh Yaaaa! These cookies are sooo good! I mixed up the Hershey®️ kisses with KitKat®️ minis and even though the KitKats melt a little more it doesn’t even matter because they taste even better. Maybe the pictures don’t turn out quite as good, but this time that is okay. The cookies will speak for themselves! I can’t get over how delicious they are. Almonds. Good. Almond butter – fabulous! Almond butter cookies – more fabulous!🍪

Almond Butter Spring Blossoms
Ingredients
- 1/4 cup sugar
- 1/2 cup brown sugar
- 1/2 cup almond butter
- 1 egg
- 1 1/2 cup flour
- 3/4 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon kosher salt
- 30 candy pieces- either Hershey®️ kisses or KitKat®️ white minis
- pastel colored sugar for rolling dough in
Instructions
- Preheat oven to 375℉.
- In a large bowl of a stand mixer, beat sugar, brown sugar, almond butter, and egg.
- Gradually add flour, baking soda, baking powder, and salt.
- Roll dough into 1 inch balls. Roll each dough ball into colored sugar and place on ungreased cookie sheet about 2 inches apart.
- Bake for 7-10 minutes. Edges should be light brown in color. Press candy in center of cookie.
- Transfer to wire cooling rack.
- Enjoy!
