Garlic and Herb Roasted Carrots topped with goat cheese are the perfect addition to any meal especially when you are going for healthy but mostly tasty!!
There are two kind carrot eaters in the world: those that love raw carrots and those that prefer the cooked/roasted/softened version. I am the outlier because I love both to be honest. Buuuut, after eating these garlic and herb roasted carrots I lean slightly more to loving the cooked/roasted kind.
I am already planning my November’s menu out with delicious meals and adding these roasted carrots on the side! They are quick, they are pretty, and me and my husband both were in shock at how amazingly delicious these carrots were.
I would be fooling myself to think all three of my kids would eat these but 1 out of 3 isn’t terrible. It is a continual work in progress and eventually I will wear them down and they will all love these carrots!!
I still am uncertain at what made me happier- how good they tasted or how incredibly pretty they were?! There’s just something about eating pretty food that I love. And I love serving it to my family even more.
These carrots almost made me as happy as I was on Saturday after the Huskers won!!! Almost…that is. They are 1-6 and I can probably guess what you are thinking (for those non-Husker fans out there!) but I am still rooting for ’em.
I was lucky enough to be at the game at Memorial Stadium in Lincoln with my dad. I had a Runza® (details ya know!) and it was sooo amazing!! The game was so amazing that is, well the Runza too but for sure the game. I just love them Huskers.

I totally underestimate carrots. I certainly buy my share of baby carrots prepackaged and they are a great snack on occasion. They are great raw or cooked with a chuck roast and yet if you are wanting to try carrots roasted I would highly recommend green top carrots for maximum flavor and freshness.
When prepping them, I cut the green tops down to about 1 1/2-2 inches long.

Olive Oil
Garlic
Whole Wheat Bread Crumbs
Salt/Pepper
Parsley
Goat Cheese
Favorite Garlic and Herb Roasted Green Top Carrots
Ingredients
- 3 bunches carrots about 20
- 2 tablespoons extra-virgin olive oil
- 3 cloves garlic minced
- 1 1/2 tablespoons whole wheat bread crumbs
- Pinch salt
- Freshly ground black pepper
- 1 tablespoon fresh chopped parsley
- 1 tablespoon goat cheese
Instructions
- Preheat oven to 425℉.
- Snip green tops down to about 2 inches. Wash, trim bottoms, and peel carrots.
- Place in a rimmed baking sheet. Drizzle olive oil over carrots and mix carrots together to evenly coat them.
- Toss the minced garlic over the carrots. Sprinkle the bread crumbs evenly over all of the carrots. Add the pinch of salt and black pepper.
- Sprinkle on the chopped parsley followed by the crumbled goat cheese.
- Roast for 20 minutes or until carrots are easily pierced with a fork.
- Serve warm.
