Roasted apples with a cinnamon oat crumble topping are the perfect addition to any fall meal. They are easy and quick and just the right size!
November is here! I seriously don’t know how 2018 can be moving along so fast. Thanksgiving is coming and all of the holiday shenanigans. It’s crazy at our house around the holidays. The kids just cannot contain themselves when it comes to Christmas.
I haven’t started Christmas shopping because I like to wait until after Thanksgiving. In the meantime, I will be spending my time making lots of fall-inspired meals and treats just like these roasted apples. Who doesn’t love apple crisp? I know I certainly do. However, I wanted to make individual apple crisps right inside some apples for the more appropriate-sized portions as my husband likes to call 1/4 of the pan one portion! 😉
Plus, these are soo easy and quick to prepare! So many likes all around!
To start, I wash the apples and cut out the stem and core as shown above. Then I mix up the cinnamon oat crumble topping and fill the apples up to with the crumble topping. Bake at 425℉ for 20-25 minutes. It is. that. easy.
You will be shocked at how delicious these roasted apples are. I know this because I was shocked and I am pretty sure we have quite a bit in common like we both love apple crisp and fall time and such!
I want to know what your October was filled with? What have you guys been up to? I had intended to make it to some pumpkin patches and we literally did not make it to a single one! We were busy busy busy!! The boys have done LOTS of motocross riding. I have made it to a couple Husker games and yep we won both of them (me giving you a cool head nod).
This time of year can easily get out of hand in the food department as in I eat too much, sit for too long, and do it all over again the next day. However with a few adjustments we can really make a difference just by making fun fall foods a bit healthier and getting outside and moving around a bit more.
Ingredients
Honeycrisp Apples
Lemon Juice
Coconut Sugar
Whole Oats
All-purpose Flour
Cinnamon
Butter
Roasted Apples with Cinnamon Oat Crumble Topping
Ingredients
- 4-5 honeycrisp apples
- lemon juice
- 1/2 cup coconut sugar or brown sugar
- 1/4 cup all-purpose flour
- 1/4 cup whole oats
- 1/2 teaspoon cinnamon
- 3 tablespoons cold butter cut into thirds
Instructions
- Preheat oven to 425℉.
- Wash and dry apples. Cut out stem and core using a paring knife carefully and avoid cutting through the bottom. Squeeze lemon juice over apples generously to prevent browning. Set aside.
- Meanwhile, add sugar, flour, oats, and cinnamon to a medium bowl and mix. Work in cold butter with a pastry cutter or fork until mixture becomes crumbly.
- Spoon crumble mixture into apples until filled.
- Place apples in a baking dish and bake for 20-25 minutes or until apples are softened to your liking.
