Sheet Pan Harissa Sausage and Roasted Sweet Potatoes are so good you will want to know first what harissa is and why you haven’t been using it!
I’m all for meatless Monday but this week we are going to have to reconsider our options and go with Tuesday or Wednesday. Because life happens ya know and there are times you just can’t pass up a good meal, meat or no meat.
That’s why I’m talking about this Sheet Pan Harissa Sausss…wwwaa waa wait! Harissa what? Did I lose you at harissa? Don’t fret. Let me explain. Harissa seasoning is a seasoning you are going to want to get on board with because it’s basically the long lost sister you have been looking for all your life. It’s that good!!
Harissa seasoning is a combination of chile peppers, garlic, coriander, and cumin. If you love Moroccan and Middle Eastern flavors, then you will love this. And it goes great over the sausage and vegetables.
We have been eating sooo many different soups lately because of the extremely cold weather and somehow we haven’t gotten sick of them. However, this meal was such a great recipe to add some variety and different flavors. We were almost shocked at how crazy delicious it was because we did not expect it at all which is like the best kind of surprise.
Another good surprise would be a 30 degree day. Tomorrow our kids have late start because they are forecasting wind chills of -20 to -30! Say what?! I can’t even handle it this cold. We got snow again this weekend and we seem to have gone on strike because our driveway is eh kind of cleared of snow.
So, if you are going to have some sheet pan harissa sausage and roasted sweet potatoes, you are going to want some quinoa and fresh greens to go with them. They complement the meal just perfectly!! It will make you smile. Oh, and you can certainly opt for your own dressing but I HIGHLY recommend this avocado lime dressing. It’s like the cherry on top!
My husband loved this meal so much he said we have to have it again soon. It’s one of his all-time favorites.
And to have a weeknight meal that can be tossed together on a sheet pan and come out like this is enough convincing for me! I hope you guys like it as much as we do!!
Sheet Pan Harissa Sausage and Roasted Sweet Potatoes
Ingredients
- 1 lb pork sausage links
- 1 sweet potato, large peeled and chopped into 3/4'' chunks
- 1/2 yellow onion, sliced
- 2 tbsp olive oil
- 1-2 pinch kosher salt
- 1 pinch black pepper
- 1 1/2 tsp harissa seasoning
- 1 lime, juiced
- 1/2 cup quinoa, uncooked
- 3 cups fresh greens, chopped
- 1 cup green cabbage, chopped
- 2 tbsp pistachios, chopped
Cilantro Lime Dressing
- 1 avocado, peeled and pitted
- 1/2 tsp kosher salt
- 2 cloves garlic, minced
- 1 lime, juiced
- 1/4 cup plain greek yogurt
- 1/2 cup water
- 1/4 cup olive oil
Instructions
- Preheat oven to 400℉. On a large rimmed baking sheet add sweet potato and onion. Drizzle olive oil over along with 1 tsp harissa, salt, and pepper. Mix up well with your hands to evenly coat vegetables with seasonings and oil.
- Add sausage to baking sheet and sprinkle remaining harissa over sausage and vegetables. Squeeze lime juice over baking sheet. Bake for 45 minutes, shaking pan halfway through to mix up vegetables and turn sausage over.
- Meanwhile, cook quinoa according to package instructions. Cover and set aside until ready to use.
- Add chopped greens and cabbage to large bowl. Toss in quinoa and top with chopped nuts such as pistachios. Add cilantro lime dressing upon serving.
Cilantro Lime Dressing
- Add all ingredients to a food processor and process until smooth. Refrigerate until ready to use.
