Hello summer days!
It may not technically be summer yet but it’s close enough for me. The heat + humidity have really set in around here lately and I have officially changed my wardrobe to athletic shorts and tanks. I really try to dress nice at the beginning of the day but it rarely lasts. After 15 minutes outside in 90 degree weather when the humidity is sky high I can’t bear to be wearing anything else.
Summer is great, though! I love the fresh everything including flowers, produce, cut grass. It’s all a constant reminder of how much I love this time of year.
I especially love fresh salads like this one. I have been putting chopped cucumbers in everything lately and it got me thinking. I need a simple but mainly quick-to-make cucumber salad that can be tossed together in a hurry for a weeknight dinner or backyard gathering and still taste amazing. No fancy equipment or small appliances necessary for this one.
Ways this salad can improve your day:
- Eat it just as is alongside your main course for lunch or dinner. The combination of cucumbers, cherry tomatoes, red onion, feta cheese + olive oil, apple cider vinegar, pink salt, black pepper is enough to make my mouth water immediately. It’s quite possibly my favorite summer salad combo.
- Add some of cucumber salad to a dark leafy green salad and consider adding kalamata olives, avocado, and chickpeas to make it a meal. YUM!
- Grab some as a snack mid-afternoon. The dressing combo of EVOO, apple cider vinegar, dill weed and salt/pepper is delicious and it gets even better after the first day.

Best Simple Cucumber, Tomato, and Onion Salad
Ingredients
- 1 English cucumber, sliced 4-5 mini cucumbers would work well too
- 2 cups cherry tomatoes, halved
- 3 tbsp chopped red onion
- pink salt or kosher to taste
- black pepper to taste
- 2 tbsp olive oil
- 2 tbsp apple cider vinegar
- 1/4 tsp dill weed
- 2 tbsp feta cheese
Instructions
- In a large bowl, combine cucumber, cherry tomatoes, red onion, dill weed, salt and pepper. Add olive oil and apple cider vinegar and stir until ingredients are evenly coated with dressing. Top with feta cheese. For best results, let salad marinate in fridge for at least 30 minutes.
