These bars are everything you love about strawberry pie minus the pie crust and the addition of the best graham cracker crust!
I love strawberries in the summer!
I could eat them plain and they are just as good as they are in these jello bars. However, sometimes I just love mixing things up a bit and that’s exactly what happened with these strawberry pie jello bars.
These bars were made the day after I totally flopped on some lemon poppyseed scones I was super excited about. But something about me always thinks scones need to taste just like a muffin and mine didn’t and so I was super disappointed. Who wants a dry scone?? Not me and I bet you don’t either…
That is when I decided to skip the scones and just move on. Sometimes it is just best to keep going and not look back, ya know?!
And because I think you deserve a snapshot of the graham cracker crust that always seems to get my mouth watering, here ya go!
I almost couldn’t believe how tasty these bars are. I had my 3 little helpers on standby to confirm their deliciousness and although their dollop of whipped cream was much more massive than in the pictures they still ALL loved these strawberry pie jello bars!

We have been having quite the summer with all the camps and motocross we can seem to fit in. We wouldn’t have it any other way honestly.
This past weekend we headed to Council Bluffs for some motocross racing at Westfair and we all had a blast. The boys did so well and Reese managed to find enough friends to keep the entire motocation enjoyable!
I don’t know about you but usually after days away all I want is some fresh fruits and vegetables! These strawberry pie jello bars were good enough!!
Strawberry Pie Jello Bars
Ingredients
Graham Cracker Crust
- 1 1/2 cups graham cracker crumbs or 10 graham cracker sheets processed in food processor
- 1 tbsp brown sugar
- 7 tbsp butter melted
Filling
- 3/4 cup granulated sugar
- 2 tbsp corn starch
- 1 cup water
- 3 oz strawberry gelatin
- 4 cups strawberries, sliced nearly 2lb
Instructions
Graham Cracker Crust
- Preheat oven to 375℉.
- In a medium bowl, combine crumbs, sugar, and melted butter until well mixed. Pat into a 8x8 or 9x7 baking dish using the bottom of a clean measuring cup making it even.
- Bake for 5-8 minutes or until golden brown. Set aside.
Filling
- Combine sugar, corn starch and water in a small sauce pan. Bring to a boil, stirring frequently. Once to a boil, stir another 2 minutes until thickened. Remove from heat. Stir in strawberry gelatin until dissolved.
- Refrigerate mixture for about 20 minutes. This is a good time to slice strawberries. Arrange strawberries over graham cracker crust. Pour gelatin mixture over strawberries and smooth out with a rubber spatula. Refrigerate until set, about 3 hours.
