Fresh herbs, walnuts, garlic, olive oil, and parmesan cheese are all you need to get this delicious pesto to come together! A great way to use fresh herbs that are beginning to wilt.
I am always buying fresh herbs to add to dishes and recipes! I love most all fresh herbs. However, I am frequently annoyed that they seem to go bad rather quickly.
This herb and walnut pesto is a great way to turn those wilted herbs into something magnificent, life-changing even! I don’t use pesto that often but every time I do I’m like why don’t I use this more often!! It’s so delicious and can be used in so many ways. It can be added to sandwiches, wraps, pizza, and all the meat and/or veggie bowls you can come up with.
Here are a few ideas on how to use this pesto:
- Egg, Tomato, & Pesto Sandwich -this recipe is still one of my absolute favorites! If you don’t already know it I love eggs and incorporate them into a supper at least once a week. The pesto used is a bit different than this recipe so choose based on what you have on hand. Both are great!
- Sheet Pan Pesto Salmon – this salmon is so easy to make and the pesto on top adds so much flavor especially if you don’t want to overdo it on the fishy tasty that salmon can sometimes have.
- Italian Chicken Paninis – I love adding pesto to sandwiches because it turns them into something much better than just a “sandwich.” Again this pesto is different than what was made in the recipe but the fun thing about pesto is that it can be made in so many different ways!

Best Herb and Walnut Pesto
Ingredients
- 1 cup fresh cilantro packed
- 1 cup fresh parsley packed
- 1/4 cup walnuts
- 2 cloves garlic peeled
- 1/2 cup parmesan cheese grated
- 7 tbsp olive oil
Instructions
- Add first five ingredients to a food processor along with 1/4 cup olive oil (4 tbsp). Pulse several times. Add additional olive oil by tablespoons until you reach the desired consistency you like.
- Store in fridge.
