Monday again…geesh the weekends sure go fast. Especially when I try to savor every second of them. Our younger boy turned 3 this weekend and we had a party for him at my parent’s cabin along the Platte River and it was amaaaazing! I could literally spend all my days at that glorious little cabin. It is incredible! So relaxing and peaceful. Well, aside from the 7 kids under the age of 6 running around! Ha! 🙂 So back to that savoring every second comment, the other thing I was savoring was this summer broccoli salad. I love me a good broccoli salad! But what really excites me is how good it tastes without any mayo in it! That is right! No mayo, my friends. I am a little obsessed with Greek yogurt these days. I can eat the plain stuff or fruit flavored. It does.not.matter. I like it all! But just to set things straight, don’t expect the taste to be the same as if you use mayo because it is different. But I love it!
I know there are thousands of broccoli salads out there and hundreds of healthy options too, but one thing I wanted in my own broccoli salad was sweet 100s and no bacon. Sorry bacon lovers I am not hating on bacon but I just do not like it. I am more of a sausage lover, and I’m pretty sure no one would go for a sausage and broccoli salad. Eek!!
So what I came up with looks like this –> a creamy broccoli salad with a healthy yet tasty dressing consisting of Greek yogurt, apple cider vinegar and granulated sugar to create that creamy dressing everyone looks for in a broccoli salad. I chose to accompany the broccoli with SWEET 100s, RED ONIONS, DRIED CRANBERRIES, AND SUNFLOWER SEEDS. TASTY! TASTY!
To make this salad even better was sitting down and eating it with a nice juicy burger, mouth-watering watermelon, and chips and salsa. Oh! And an Eileen’s cookie to wash it all down! And kicking back on this beautiful cloudy day with the fire pit going was fantastic. It was like we were not even in Nebraska. We walked away with that fire pit smell on our clothes. Love that smell!
So, the next time you have a backyard picnic or head out to your own cabin give this recipe a try! You will not be disappointed!
I think I will become a regular at this extraordinary little cabin this summer. Seriously, who wouldn’t want to wake up and walk out on this deck with their extra-large coffee and hear nothing but the birds sing.
Summer Cabin Broccoli Salad
Ingredients
- 1 large head of broccoli cut in bite size pieces
- 1/3 cup red onion chopped
- 1/3 cup sunflower seeds
- 1/3 cup dried cranberries
- 1 cup sweet 100s halved
- 1/2 cup plain greek yogurt
- 2 tablespoons apple cider vinegar
- 3 teaspoons granulated sugar
Instructions
- Combine yogurt, vinegar, and sugar in small bowl. Set aside in refrigerator.
- In large bowl, add broccoli, onions, sunflower seeds, cranberries, and sweet 100s. Pour dressing on top and mix well. Serve immediately or refrigerate prior to serving.
- Enjoy!
