Hey friends! It is good to get back to my blog! Life has been a little hectic since we got back from our family vacay so I stepped away from the blog for a few extra days in order to get our kids back into a regular routine. And today I want to present one of the best tasting breakfast trends…Off-the-farm blackberry overnight oats!! Yes that is right! These blackberries come straight off the Reynold’s farm in south central NE! And they are straight up delicious!
These blackberry overnight oats contain whole oats, skim milk (you can add any %fat milk you prefer though), coconut yogurt, pecans, chia seeds, and honey.
This bowl of breakfast smiles is totally delicious but there is more going on in the bowl of oats than you may know. Many people are aware that whole oats contain fiber but blackberries are a powerhouse for your health. They contain 8-10 grams of fiber per cup! Blackberries are a rich black color–> meaning they have a high anthocyanin content which in turn can reduce one’s risk for cardiovascular disease.
What is even more awesome about this overnight oats recipe is that my 4 year old ate these up like there was no tomorrow! And that is coming from a boy that only eats the pre-packaged peaches and cream oatmeal! This lady is all smiles right now because when I am able to create something delicious and healthy AND my kids like it then, well I know I have succeeded! Yessum.
This utterly fantastic breakfast trend will be staying around at our house for a long time because seriously when you have- 1. WHOLE OATS 2. COCONUT YOGURT ( YEAH, IT IS SO DELISH!) 3. MILK 4. PECANS 5. WILD BLACKBERRIES 6. CHIA SEEDS and 7. HONEY YOU ARE GOING TO HAVE A PARTY IN YOUR MOUTH! HAHA!
But really, this breakfast is a great start to your day to get going and provide a lot of nutrients but still taste so great! This would be a great breakfast to quickly get ready for your kids the night before and pull out of the fridge for them before school. So quick and easy. Breakfast is definitely an important meal and depending on your eating habits you could eat half one morning and save the other half for the following day. These oats are just too easy and delicious to pass up. You should probably give them a second look!
Off-the-Farm Blackberry Overnight Oats
Ingredients
- 1/2 cup Quaker Old Fashioned Oats
- 1/2 cup low-fat milk I used skim but use what you prefer
- 1/4 cup coconut yogurt Recommend Chobani coconut blended greek yogurt
- 1/2 teaspoon chia seeds
- 1 teaspoon honey
- 1/2 cup blackberries or more
- pecans crushed
Instructions
- Combine oats, milk, yogurt, and chia seeds in mason jar or sealable container.
- Cover and refrigerate overnight.
- In the morning add blackberries, hand crushed pecans and honey.
- Stir well and enjoy!
