Honey mustard chicken with Jonagold apples is the perfect evening meal. It is quick to make, simple with everyday ingredients and is a fun spin on the usual chicken recipe.
I really enjoy cooking with chicken because there are so many things you can do with it. In my opinion, it is one of the few meats that can be grilled, baked, broiled, fried and it tastes great. The trick is to pair it with the right ingredients to intensify its flavor. I hear a lot of people complain about having “chicken again”. 😉 But when chicken is prepared with the correct herbs and seasonings to complement it, the result is extraordinary. Today, I am bringing this honey mustard chicken and Jonagold apples to your attention because it tastes just that…EXTRAORDINARY!!
And a recipe that tastes extraordinary but is simple to make is one that sticks around at our place! I love this recipe because a cast iron pan can be used for the entire recipe.
Start by searing the chicken in a little olive oil on medium-high heat on the stovetop.
The onion and apples are added and cooked until softened. Add chicken broth and honey mustard to the skillet and boil the mixture.
Bake for 15-20 minutes at 450 degrees. If desired, a gravy can be made at the end to top off the chicken.

Honey Mustard Chicken Thighs with Jonagold Apples
Ingredients
- 6-8 chicken thighs skinless and boneless
- 2 tablespoons extra-virgin olive oil
- 1 yellow onion cut into wedges
- 1 large Jonagold apple cut into large chunks
- 1 cup low-sodium chicken broth
- 3 tablespoons honey mustard
- 1 teaspoon butter
- 1 tablespoon all-purpose flour
- fresh parsley chopped
- salt and pepper
Instructions
Chicken Thighs:
- Preheat oven to 450 degrees Fahrenheit.
- Using a cast iron skillet, heat olive oil over medium-high heat. Add chicken thighs seasoned with salt and pepper.
- Add chicken thighs to skillet and cook for 5-6 minutes and then flip over and cook another 2 minutes. Transfer chicken to a plate.
- Add the onion wedges and apple chunks to the skillet. Cook in skillet for 5 minutes.
- Meanwhile, mix the chicken broth and honey mustard in medium-sized bowl and pour over the onion and apple mixture. Bring contents to a boil.
- Return the chicken thighs to skillet and bake in the oven for 15-20 minutes until chicken reaches internal temperature of 165 degrees.
Gravy:
- Upon removing chicken from the oven, transfer thighs to a plate. Simmer the remaining juices over medium heat. Mix butter and flour together and gradually add to chicken juices and stir well. Pour over chicken and serve.
