Who loves soup this season?! Odds are if you are here than you love it as much as me! I have put together a list of 7 healthy soups that are great to make this time of year!
So let’s go and get cooking.

Best Creamy Tomato Soup
Ingredients
Tomato Soup
- 2 tablespoons extra-virgin olive oil
- 2 medium carrots diced
- 1 sweet yellow onion chopped
- 2 tablespoons tomato paste
- 2 cloves garlic minced
- 28 oz can crushed tomatoes
- 3 cups vegetable broth
- ¼ teaspoon Kosher salt
- ⅛ teaspoon black pepper
- ⅛ teaspoon red pepper flakes
- 1 large fresh tomato such as beefsteak variety, chopped
- 5 fresh basil leaves chopped
- ¼ cup heavy cream
Croutons
- 2 cups bakery bread such as sourdough ciabatta, or Italian, cut into ¾'' - 1'' cubes
- 1 tablespoon Olive oil
- Salt
- Pepper
Instructions
Tomato Soup
- In a pot or dutch oven, heat olive oil over medium heat.
- Add onion and carrots and cook 5-8 minutes or until carrots soften.
- Add tomato paste and garlic. Stir in until well mixed and cook another minute.
- Pour in crushed tomatoes, vegetable broth, salt, pepper, red pepper flakes, tomato, and fresh basil. Stir mixture together and bring pot to a boil. Reduce to a simmer and cook for 20 minutes, covered.
- With an immersion blender or regular blender, blend soup. Stir in heavy cream.
- Serve warm and top with homemade croutons.
Croutons
- Add bread to a microwaveable baking dish. Pour olive oil over bread and sprinkle with a pinch of salt and black pepper. Mix together to evenly coat the bread with the oil and seasonings. Microwave on high 4-5 minutes, stopping every minute to stir, until bread is golden brown around the edges.
#2 Minestrone with Quinoa
A vegetarian soup that is packed with tons of flavor! It uses frozen veggies in addition to fresh to increase convenience and get dinner on the table quicker.
Minestrone with Quinoa
Ingredients
- 2 tablespoons extra virgin olive oil
- 1 medium onion chopped
- 2 carrots sliced
- 2 ribs celery diced
- 2 cups mixed frozen veggies including corn, peas, green beans Or you could use some freshly chopped potatoes, zucchini, or squash
- ½ teaspoon dried thyme
- 5 fresh basil leaves finely chopped
- 28 oz can diced tomatoes
- ¼ cup tomato paste
- 3-15 oz cans vegetable broth
- ¾ teaspoon Kosher salt divided
- ½ teaspoon black pepper divided
- ⅛ teaspoon red pepper flakes
- 2 cups chopped fresh kale
- 1 can Great Northern beans rinsed and drained
- 1 cup uncooked quinoa
- Optional toppings: Parmesan cheese
- Serve with toasted crusty bread like
Instructions
Mirepoix
- In a large pot or dutch oven, heat olive oil over medium heat.
- Add chopped onions, carrots, and celery and cook, stirring occasionally, for 7-8 minutes or until onion has softened.
Add Frozen Veggies, Seasonings, and Broth
- Add the frozen veggies, dried thyme, and basil leaves and stir in. Cook for another 2 minutes or so.
- Now add the diced tomatoes, tomato paste, vegetable broth, ½ teaspoon salt, ¼ teaspoon black pepper, and red pepper flakes.
- Stir mixture together well.
- Increase heat to medium high and bring pot to a boil. Reduce heat to a simmer and let cook for 15 minutes.
Add Kale, Beans, Quinoa & Simmer
- Meanwhile, chop up the kale and set aside. Once the mixture has simmered for 15 minutes, add the kale, beans, and quinoa to the pot. Keep the pot at a simmer and cook for 20 minutes or until quinoa is cooked.
- Sprinkle ¼ teaspoon salt and ⅛-1/4 teaspoon black pepper.
- Serve with grated shredded Parmesan cheese on top if desired and toasted crusty bread on the side.

#3 White Adobo Chicken Chili
White chili that is full of spice and flavor. This soup is not for the weak of heart. You can choose to make it as is or scale back on the beans (aka fiber) if you need to.
White Adobo Chicken Chili
Ingredients
- 1 pound chicken breasts
- 1 tablespoon olive oil
- ½ teaspoon coarse salt
- ½ teaspoon black pepper
- 1¼ teaspoons ground cumin divided
- ½ teaspoon oregano
- 1 medium yellow onion chopped
- 2 cloves garlic minced
- 2 15 oz cans Great Northern beans rinsed and drained
- 1 15 oz can less-sodium chicken broth
- 1 chipotle chile + 3 teaspoons adobo sauce 7 oz can chipotle chiles in adobo sauce
- ½ cup chopped fresh cilantro
Instructions
- Preheat oven to 375℉. In a shallow dish, combine salt, pepper, and ¼ teaspoon ground cumin.
- Cut chicken breasts in half lengthwise. Spray chicken with olive oil spray or non-stick cooking spray. Using tongs, dip chicken breasts into seasoning blend and turn over a few different times. It's okay if chicken isn't coated entirely.
- Bake chicken for 20-25 minutes until cooked through. Let cool and then cut into cubes. Set aside.
- In a dutch oven or pot, heat olive oil over medium heat. Add chopped onion and cook for about 8 minutes or until softened. Add garlic and cook for another minute.
- Add 1 teaspoon cumin, oregano, beans, and chicken broth to pot and stir.
- After removing seeds from one chipotle chile, dice and add to pot along with adobo sauce.
- Bring pot to a boil, stirring frequently.
- Reduce heat and let simmer for 15 minutes covered.
- Add 1 cup of mixture to a food processor and pulse 5-6 times until pureed and then return to pot.
- Add chicken and cook another 3-5 minutes.
- Stir in fresh cilantro.

#4 Spicy Crab and Poblano Pepper Pot
Spicy Crab and Poblano Pepper Pot is one of the tastiest soups that you will want to make all year long. This soup combines lump crab with turkey bacon, tomatoes, red potatoes, poblano pepper, onion, and a blend of seasonings in a broth base.
Spicy Crab and Poblano Pepper Pot
Ingredients
- ¼ pound turkey bacon chopped
- 2 cups tomatoes chopped (3 medium tomatoes)
- 1 cup yellow onion diced (1/2 large onion)
- 1 cup red potatoes peeled and diced
- 1 tablespoon poblano pepper seeded and minced
- 2 cloves garlic minced
- 1 teaspoon coarse salt
- ½ teaspoon black pepper
- ½ teaspoon red pepper flakes
- ½ teaspoon dried thyme
- 2 15 oz cans chicken broth
- 4 cups fresh baby spinach chopped
- 1 cup canned coconut milk
- 6 oz crabmeat
- Toppings: chopped green onions turkey bacon
Instructions
- In a large pot or dutch oven, saute turkey bacon until crisp. Remove from pot and set aside.
- Add tomatoes, onion, red potatoes, poblano pepper, garlic and stir well. Add salt and pepper, red pepper flakes, and thyme. Cook contents 4-6 minutes, stirring often. Onion should be soft.
- Add chicken broth and bring pot to a boil.
- Simmer soup for 15 minutes.
- Stir in spinach, coconut milk, and crab. Cook for another 3-5 minutes to heat through.
- Top soup with chopped green onions, and turkey bacon before serving.

#5 Slow Cooker Chicken and Wild Rice Soup
A hearty and cozy soup full of shredded chicken breasts, wild rice, mushrooms, seasonings, and more veggies that is the perfect recipe on a cold winter day.
Slow Cooker Chicken and Wild Rice Soup
Ingredients
- 1½ pounds chicken breasts
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- 6 cups 48 oz chicken stock
- 1 cup wild rice
- 1 onion chopped
- 3 carrots peeled and diced
- 3 celery stalks diced
- 2 teaspoons poultry seasoning
- 16 oz button mushrooms sliced
- 6 tablespoons unsalted butter
- 6 tablespoons all-purpose flour
- 1 cup low-fat milk
- 1 cup ½ n ½
- Salt/Pepper to Taste
Instructions
- In at least a 6 quart slow cooker, combine chicken breasts, salt, pepper, stock, rice, onion, carrots, celery, and poultry seasoning.
- Cover and cook on low for 7-8 hours.
- At the time soup has ½ hour left of cooking, add mushrooms and mix in.
- In a small saucepan, add butter and melt over low heat. Stir in flour gradually.
- Very gradually, slowly whisk in milk and ½ n ½ until all has been added and mixture is nice and smooth.
- Remove chicken from slow cooker, shred and return to slow cooker.
- Add milk mixture to soup and stir well. Salt and Pepper to taste.*

#6 Best Hamburger Soup with Quinoa
Nothing will warm you up faster than this comfy and cozy hamburger soup with quinoa. It’s full of veggies including carrots, celery, onion, and cabbage and all of the right seasonings.
Best Hamburger Soup with Quinoa
Ingredients
- 1 pound ground beef
- 1 small yellow onion chopped
- 32 oz low sodium beef stock
- 1 cup sliced raw carrots
- 1 cup diced raw celery
- 2 small-med potatoes diced
- 4 cups green cabbage shredded
- 2 15 oz cans stewed tomatoes
- ½ cup quinoa
- 1 bay leaf crushed
- ½ teaspoon dried thyme
- ½ teaspoon dried basil
- 2 teaspoons Lawry's seasoning salt
- 1 teaspoon black pepper
Instructions
- In a large pot, brown hamburger with chopped onions on medium high heat. Continue cooking until onion is soft and hamburger is cooked through about 8-10 minutes.
- Add beef stock and stir. Reduce heat to medium low.
- Add carrots, celery, potatoes, cabbage, and stewed tomatoes.
- Bring pot to a boil.
- Add quinoa, bay leaf, thyme, basil, Lawry's seasoning sat, and black pepper.
- Reduce heat to a simmer and cover.
- Simmer pot for one hour.
- Optional toppings: dried parsley, cheddar cheese but recommended!
#7 Chicken Enchilada Pot
Healthy Chicken Enchilada Pot will provide a bowl full of nutrition and flavor. This pot will not disappoint you or your family.
Chicken Enchilada Pot
Ingredients
- 2 tablespoons olive oil
- 1 small yellow onion chopped
- 2 cloves garlic minced/crushed
- 1½ teaspoons ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon Ancho chile powder or pure chile powder
- 1 15 oz can fire roasted diced tomatoes
- 32 oz chicken stock
- 1 10 oz can red enchilada sauce
- 1 pound cooked shredded chicken
- 1 can black beans
- ¾ cup corn
Instructions
- Heat olive oil in a large pot over medium heat. Add onions and cook for 3-5 minutes or until soft, stirring occasionally.
- Add garlic and cook for another minute.
- Stir in the cumin, coriander, and Ancho chile powder until it is well incorporated.
- Add the tomatoes, chicken stock, enchilada sauce, beans, and corn.
- Bring pot to a simmer over medium high heat.
- Add shredded chicken and reduce heat to medium low.
- Ladle into serving bowls. Optional toppings: avocado, jalapeño, tortilla strips, and/or chopped cilantro
