I don’t know about you but lately I have only wanted to make meals that start with SLOW COOKER and end with DELICIOUS!! That’s why I am all about these SLOW COOKER SPICY CHICKEN TACOS!! Talk about yum in a tortilla.
So, after I made these my husband was like, “Why two tortillas?” At the time all I could give him was I dunno everyone is doing it!! Haha! But after a little research on street tacos, it seems sometimes that inner tortilla can break so why not have a backup? There ya go! However, with these reasonably stuffed soft tacos we didn’t have that issue so one will suffice. Yet, I kinda liked the photograph with two so now you know the daily struggles in my life.
I completely love that these tacos are a cinch to prepare. They are full of healthy ingredients and it’s not pictured in my pics but I can not even bear to eat a taco without my favorite salsa. So if you feel the same about your tacos then totally do that!
For some reason, my kids don’t appreciate the whole taco thing quite yet? I don’t even know. How? Otherwise, we would eat tacos like every Friday not even joking. Come to think before we had kids we made tacos all of the time. It was a big ‘ol taco bar kind of thing and it was awesome.

This is meal 3 of my recent meal plan and guys, I’m so excited for these!! As of right now, I am planning to post one meal plan per month but further down the road I will like to do more per month.
So these delicious tacos aside, how ’bout those Olympics lately?!! So fun to watch! I don’t know about you but I always thought I enjoyed the Summer Olympics more but not this time. I am loving these Winter Olympics. And how awesome that Tieghan Gerard’s (FAV FOOD BLOGGER!) brother Red won GOLD!! So fun!! I also have to say I will always LOVE the ladies’ ice skating…and maybe that’s what I want to do when I grow up!

Slow Cooker Spicy Chicken Tacos
Ingredients
- 6 '' Tortillas
- 1 lime
- 2 jalapeños
- ½ cup greek yogurt
- Cilantro chopped
Slow Cooker Chicken
- 1½ pounds chicken breasts
- 1 chipotle chile in adobo sauce seeds removed and chopped
- 1 teaspoon adobo sauce
- 1½ teaspoons chili powder
- ½ onion chopped
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- ½ teaspoon paprika
- 2 cloves garlic minced
- ½ teaspoon cumin
- 6 tablespoons lime juice
Instructions
- In a slow cooker combine chicken, chipotle chile and sauce, chile powder, onion, salt, pepper, paprika, garlic, cumin, and lime juice. Cook on low 7-8 hours.
- Shred chicken and mix in juices from slow cooker.
- Warm tortillas in microwave for 15-20 seconds.
- Add chicken to tortillas along with either sliced or chopped jalapeños, greek yogurt, cilantro, and a generous squeeze of fresh lime juice.
- Serve with chips and salsa.
